Sprouts Mung Bean Recipe | Sprouted Moong Salad

Sprouted moong recipe or sprouted mung bean recipe is a healthy salad recipe and is a perfect weight loss recipe. This healthy salad recipe is the best clean eating recipe and is so easy and yummy. This vegan green moong recipe can be had for breakfast or a quick snack. If you want to have a healthy salad recipe for lunch, this delicious salad is a must try.

I used to love taking healthy salads in my lunch box. Now since I am working from home, I indulge in lots of healthy recipes and salad recipes Indian. I am on a weight loss diet, and this sprouted moong or sprouted mung bean recipe is keeper.

Moreover, sprouts have lots of health benefits. Consumption of sprouts aids in weight loss as they are rich in protein, helps improve digestion and are a rich source of fiber, controls blood sugar and lowers the risk of heart disease. Always consume sprouts in the daytime, that is from breakfast to noon. Do consult a dietician or your Doctor if you are on any special diet.

  • Sprouted green gram and cherry tomato stir fry
  • Sprouted green moong curry with coconut
  • Mixed sprouts sandwich
  • Sprouted chickpea stir fry

Here are some healthy salad recipes:

  • Mexican corn & bell pepper salsa
  • Cold pasta with potato
  • Cucumber salad
  • Pear & pomegranate salad
  • Strawberry salsa

What goes in making healthy sprouted mung salad recipe?

  • Sprouts: Use fresh green moong bean sprouts in this healthy salad recipe.
  • Tomato: Use firm, fresh raw tomato in this recipe. You can also add cherry tomatoes and finely chopped onion if you wish.
  • Sweet corn: I have added some sweet corn in this salad recipe. Sweet corn is boiled and added. If using frozen, thaw before use.
  • Lemon: Lemon juice is the only dressing I have added in this recipe.
  • Coriander leaves: Few chopped coriander leaves are added for garnish. Parsley can be added if coriander leaves are not available.

How to make the sprouted green mung salad?

First let us see how to grow moong sprouts.

  • Soak the green mung bean overnight in 3 cups water.
    On Day1 morning drain the water completely and store the green mung in an airtight box. Let them be like that on day 1 night.
    On Day2 morning you will notice small sprouts from the green grams.
  • If you want larger sprouts, store them in the same airtight container for another night(day 2 night).
    On Day 3 morning, you will see nice and large sprouts.
  • You can either store them in the fridge for 2 more days or you can start using them in your recipes.
  • Remember to wash the sprouts every morning using clean running water till they are ready.

To make the sprouted mung bean recipe:

  • After the sprouts are ready, take a mixing bowl and add mung sprouts, chopped tomato, lemon juice, salt and chopped coriander leaves and mix well.

Ingredients

  • 1 cup sprouted green grams/moong
  • 1/2 cup chopped tomatoes
  • 1/2 cup boiled /sweet corn steamed
  • 1/2 lemon juice
  • Few coriander leaves finely chopped
  • A pinch salt for garnish

Instructions

How to sprout the green grams?
