Today’s recipe is a simple cucumber salad recipe. It is so simple that even a child can easily prepare it. This is a cooking without fire recipe and is a healthy recipe too. We all should eat different types of salads everyday. Salads can be served along with main meals. Just chop the vegetables and mix it. I have used lemon juice, salt and black pepper powder as the salad dressing. I love to keep my salads light and hence dress it with minimal dressings.
I remember, when I was in hp I and a friend had prepared healthy salads. We had to prepare 4 salads which can serve 4 to 5 people. The healthy salads were auctioned and were bought by a lab director for Rs.7500/-. An admin later passed me the message that, 5 lab directors will come and have the salads in a conference room. It was a great moment, when I served the salads to the lab directors and they loved them.

My daughter loves salads. She loves this grated carrot with chia seeds and beetroot salad too. Sometimes she takes salads in her snack box to have during the short break. My hubby also loves salads but he does not like chat masala and hence I avoid adding it to my salads. You can always add a little of chat masala and black salt if needed.
Salads like today’s cucumber salad is very nutritious. Always make it a habit to eat atleast one variety of salad everyday. Make sure that the vegetables used to make the salad are fresh and raw. Try to use organic vegetables. But if organic are not available, then make sure to wash the vegetables thoroughly with running water before using them.
In today’s cucumber salad, I have added freshly chopped cucumber, chopped onion and chopped tomato. You can even add finely chopped carrots and bell pepper too. Serve the cucumber salad with matar paneer as a side dish or add it as a filling in sandwich.
Cucumber Salad
Ingredients
- 1 cucumber peeled and chopped into small pieces
- 1 Tomato finely chopped
- 1 onion finely chopped
- 2 tablespoon lemon juice extracted from fresh lemons
- 1/2 teaspoon Black Pepper Powder
- 2 tablespoon corriander leaves finely chopped
- 1/4 teaspoon Salt
Instructions
- Take a mixing bowl and add all the ingredients one by one. Mix well.
