Cold Pasta salad with potatoes is an Italian salad made with penne pasta, baby potatoes, green peas, lettuce and mayo. This pasta salad with potato is a perfect side dish on the lunch or dinner buffet table. Gets ready under 20 minutes, this pasta salad with potato is a must try.

You can serve salads for parties or have it as an evening snack. This recipe is very simple to make. Just boil pasta, potatoes and green peas separately. You can even add boiled carrots to this recipe. After boiling, mix them together, add mayonnaise and other ingredients and toss. Refrigerate and serve chilled. The salad tastes best when it is cold. But even if it is not refrigerated it tastes good.

Ingredients to make Cold pasta potato salad recipe:

  • Pasta: Penne pasta is used in this recipe. You can use any other type of pasta like fusilli, rigatoni or farfalle pasta.
  • Vegetables: Vegetables like baby potatoes, green peas and lettuce are added in this pasta salad recipe. You can add grated or julienned carrots too.
  • Mayo: Mayo is the dish which makes the pasta salad delicious.
  • Spices: Spices like black pepper powder and Italian seasoning are added to this salad.
  • Lemon juice: Lemon juice is added as a dressing for the pasta and potato salad.

How to make potato salad with pasta?

  • Boil the pasta al-dente. Drain and keep aside.
  • Boil or steam the potatoes. Peel and cut into halves.
  • Boil the green peas in a bowl of water and keep aside.
  • In a mixing bowl, add pasta, green peas, potatoes and lettuce.
  • Add mayonnaise, black pepper powder, lemon juice and salt to taste and toss.
  • Garnish with Italian seasoning.
  • Refrigerate it and serve chilled.

Notes to remember while making pasta and potato salad:

Vegetables of your choice can be added to this recipe. Like boiled or steamed carrots and beans. Add more mayonnaise if you love it.

Boiled potatoes are good for health. They promote bone health as they are rich in calcium. They also help prevent constipation as they are rich in dietary fibre. Children love boiled potatoes and hence you can combine them with pasta and pack into their snack box too.

Ingredients

  • 1 cup penne pasta
  • 12 baby potatoes
  • 1/4 cup green peas
  • 5 tablespoon mayonnaise
  • 1 teaspoon black pepper powder
  • 2 cups torn lettuce
  • 1/2 lemon juiced
  • To taste salt
  • Italian seasoning for garnish

Instructions

  • Boil the pasta in 3 cups water al-dente. Drain and keep aside.
  • Pressure cook the potatoes, or boil or steam them. Peel and cut into halves.
  • Simultaneously boil the green peas in a bowl of water and keep aside.
  • In a mixing bowl, add pasta, green peas, potatoes and lettuce.
  • Add mayonnaise, black pepper powder, lemon juice and salt to taste and toss.
  • Garnish with Italian seasoning.
  • Refrigerate it and serve chilled.
