Gajar Matar Sabzi | Carrot Peas Stir Fry

Gajar matar sabzi is a simple, tasty, vegan, no onion no garlic and easy stir fry made with fresh seasonal carrots and green peas. This vegan gajar matar sabzi is a winter recipe usually prepared in North India. If you are looking for carrot sabzi for roti, then this carrot peas dry curry is a must try. This healthy carrot peas Indian style recipe can be cooked under 30 minutes.

With minimal ingredients, one can easily make this no onion no garlic recipe with carrot and peas. You can use any type of carrots in this recipe. In India, we get Delhi carrots and Ooty carrots in the winter. But you need not wait for winter to make this nutritious carrot recipe. You can make this with regular carrots too. Also during winter, we get fresh green peas which are known as matar in India. If fresh matar are not available, canned peas and carrots can be used in this simple stir fry recipe.

Health benefits of carrots and green peas:

Apart from rich in vitamin A and beta-carotene, carrots are rich in fiber and help keep blood sugar levels under control. They are also rich in calcium and vitamin K and help in improving bone health.

Green peas are an excellent source of protein and are rich in fiber. The high fiber content helps in maintaining proper digestive health. They are rich in iron and vitamin C. Since they are rich in vitamin C they are good for building immunity too. Green peas are also good for maintaining healthy eye sight and are good for heart health. Apart from this, are are numerous health benefits. Do consult a doctor, if you are on any special diet.

What are the ingredients that goes in making Gajar matar ki subzi Punjabi style?

  • Vegetables: Use fresh, tender carrots in this recipe. You can use Delhi carrots or Ooty carrots in this vegan sabzi recipe. However, if the other varieties are not available, you can use any other variety of carrot. Also use fresh, green peas (matar). But if fresh seasonal matar are not available, then you can use canned peas or frozen peas too. Just thaw the frozen peas and then use it in cooking.
  • Spices: Easily available spices like cumin seeds(jeera), asafoetida (hing),ginger, garam masala or Kitchen king masala are used in this recipe.
  • Chili: A green chili is added for enhancing the taste and adding a bit of heat to the gajar matar subzi.
  • Oil: Any type of cooking oil like sunflower oil, groundnut oil, coconut oil, mustard oil or canola oil can be used in this simple carrot peas recipe.

How to cook fresh peas and carrots stir fry?

  • Boil green peas, drain and keep aside.
  • Heat a kadai or pan and add oil.
  • After oil gets heated, add cumin seeds and let them crackle.
  • Add finely chopped green chili and chopped ginger and fry for 30 seconds.
  • Add asafoetida and fry for few seconds.
  • Next is to add garam masala or kitchen king masala and fry for few seconds on low flame. Do not burn the masala.
  • Add carrot, mix and cook for 5 minutes by covering the lid of the kadai or pan.
  • Add boiled green peas and mix well.
  • Add ยผ cup water, mix and cover and cook on low flame till carrot and peas are cooked. Do not over cook. The carrot should just turn tender.
  • Add salt to taste and garnish with chopped coriander leaves.

How to make gajar matar sabzi in pressure cooker?

You can even make gajar matar ki subzi in cooker. Heat a pressure cooker, add oil and then add cumin seeds. After cumin seeds crackle, add asafoetida, green chili and ginger and mix well. Add carrots and green peas and mix well. Add garam masala, ยฝ cup water and pressure cook for 2-3 whistles. After pressure from cooker is released, add salt to taste and mix well. Garnish with chopped coriander leaves.

Ingredients

  • ยฝ cup green peas
  • 2 carrots peeled and cut into 1/2 inch pieces
  • 1 green chili finely chopped
  • ยฝ inch ginger peeled and chopped into small pieces
  • 1 teaspoon cumin seeds
  • 1 teaspoon asafoetida/hing
  • 1 teaspoon garam masala/Kitchen king masala
  • 1 tablespoon oil
  • Few coriander leaves finely chopped
  • ยฝ teaspoon salt or as per taste
  • 1/4 th cup water

Instructions

  • Boil green peas, drain and keep aside.
  • Heat a kadai or pan and add oil.
  • After oil gets heated, add cumin seeds and let them crackle.
  • Add finely chopped green chili and chopped ginger and fry for 30 seconds.
  • Add asafoetida and fry for few seconds.
  • Next is to add garam masala or kitchen king masala and fry for few seconds on low flame. Do not burn the masala.
  • Add carrot, mix and cook for 5 minutes by covering the lid of the kadai or pan.
  • Add boiled green peas and mix well.
  • Add ยผ cup water, mix and cover and cook on low flame till carrot and peas are cooked. Do not over cook. The carrot should just turn tender.
  • Add salt to taste and garnish with chopped coriander leaves.

The recipe can also be made with frozen peas. Just thaw before using them.
