We get so bored of food at times that we want different. Preparing the same menu everyday and eating the same type of food becomes routine at times. I always feel like innovating and trying different things when I cook. This time I thought of preparing egg bhurji with a twist. I had some marinated prawns in my fridge. Wondered how this combination would taste. Them I thought, why not give it a try? I added prawns to this egg bhurji or scrambled eggs and the outcome was really tasty.
I had prepared this dish long time back. It was lying in my folders on my laptop. I thought, I should share this recipe with you all and I am sure this will be another hit in your kitchen too. Also try egg bhurji with broccoli which was a successful experiment in my kitchen.
Ingredients:
3 Eggs
10 marinated prawns
2 medium onions, finely chopped
1 big tomato, finely chopped
5-6 garlic flakes, minced
1 green chilli, finely chopped
1 teaspoon turmeric powder
1 teaspoon chilli powder
Coriander leaves for garnishing
Salt to taste

Procedure:
Chop the onions, tomato, garlic and green chillies into small pieces..
Cut the prawns into pieces or keep them as they are.
Keep all these separate.
In a pan, add 2 tablespoon oil and saute the onions on medium flame.
Keep the pan covered.
After the onion’s turn pinkish add tomato and saute. Cover the pan for 5 Min’s.
Add the chopped garlic and chopped green chilly, stir well.
Add the marinated prawns and mix well. Cook for 10 Min’s with the lid of the pan closed.
Open the lid after 10 Min’s, add turmeric powder and chilly powder.
Add salt to taste. Normally I add 1 tsp of salt. Remember that the marinated prawns also have salt added to them. So be careful while adding salt.
Next step is to add the eggs and mix continuously till the eggs get cooked.
Leave it on gas for 5 Min’s. Start mixing again and then switch off the gas.
Garnish with chopped coriander leaves.
Serve hot with phulkas or chapatis.
