colostrum milk pudding

Colostrum is the first milky fluid which is produced by cows or buffaloes after a calf is born. As soon as a calf is born, the excess colostrum is removed and is used to make this delicious sweet colostrum pudding. Off course, some colostrum is left for the calf too. It is rich in antibodies, proteins, carbohydrates, fat, minerals, and vitamins. It also makes the immune system stronger. So, if you get some cow’s or buffalo’s colostrum, do try this Goan poss recipe.

Ingredients to make Goan colostrum milk pudding or kharwas recipe:

  • Colostrum: Use cow’s or buffalo’s colostrum to make this recipe. Some people also use colostrum powder.
  • Coconut milk: Use thick coconut milk in this kharwas or junnu recipe.
  • Jaggery: Jaggery or molasses is added for sweetness. Do not replace jaggery with sugar.
  • Cardamom pods: Few cardamom pods are added for flavour and aroma.
  • Turmeric leaf: You can add 1 or 2 turmeric leaves while making this colostrum sweet. Adding turmeric leaves is optional.
  • Turmeric powder: A pinch of turmeric powder can be added to this recipe to add colour. This is also an optional ingredient.

How to make junnu sweet?

  • Mix all the Ingredients except turmeric leaf in a deep bottom bowl and stir till jaggery melts.
  • Add the turmeric leaf. Addition of turmeric leaf is optional.
  • Steam or pressure cook it by using the double boiler method.
  • Cool down completely and then refrigerate the container with steamed pudding.
  • Use a knife and run it on the edge of the container which was used for steaming.
  • Invert on a plate. Serve chilled.

Notes to remember while making poss recipe:

  • Double boiler method is similar to steaming idlis where you keep the container with the batter in a pressure cooker in which there is little water.
