Veg tortilla pizza with mayo is a crispy and cheesy pizza which you can make under 15 minutes. Yes, believe me, this is a simple yet delicious recipe which you need for those sudden mid-night cravings. All you need are some tortillas, mozzarella cheese, some vegetables and mint mayo. You can use any mayo flavour. You don’t need any type of pizza sauces and you don’t have to spend time making those sauces too. I have used eggless mayo with mint flavour to give a twist to the pizza recipe.

You can serve this veg tortilla pizza with mayo as starters for children’s birthday parties. Chop and keep all the vegetables ready. Just when you want to serve make these delicious veg tortilla pizzas with mayo and mozzarella cheese and serve them hot. If you have a bigger OTG, you can simultaneously bake 2 tortilla pizzas saving you time.

Ingredients to make vegetable tortilla pizza with mayo:

  • Tortilla: Use any type of store bought, ready to heat tortilla in making this vegetable pizza recipe. If you don’t want store bought tortilla, you can make tortilla ta home too.
  • Mayo: Use any flavour mayo in this recipe.
    Cheese: Use shredded mozzarella cheese in this pizza recipe, because what is pizza without cheese?
  • Vegetables: I have used tomato, onion, red bell pepper, green bell pepper, yellow bell pepper baby corn and basil leaves in this vegetable pizza recipe.
  • Seasoning: Use Italian seasoning, red chili flakes and a twig of rosemary to season and garnish the pizza

How to bake a tortilla pizza with mayo, vegetables and cheese?

  • Pre-heat the oven for 5 minutes at 200 C. Line the baking tray with aluminium foil and place the tortilla on it.
  • Spread 4 tablespoon of mayo over the tortilla.
  • Spread 2 tablespoon of cheese all over.
  • Now top this with the chopped vegetables.
  • First arrange the slit baby corn equidistant from one another in a circle.
  • Then spread chopped tomato, onion Julienne and chopped bell pepper all over.
  • Top this with few chopped basil leaves.
  • Spread a generous amount of cheese all over.
  • Bake this pizza for 10 minutes at 200 C or until the edges appear brownish and crispy.
  • Garnish with rosemary twig, Italian seasoning or oregano and red chilli flakes.

You can impress your guests or anyone with this veg tortilla pizza too. The secret is addition of a thick layer of mayo below the vegetable toppings.

Ingredients

  • 2 tortilla
  • 1 cup mayo
  • 1 cup shredded mozzarella cheese
  • 1 medium-sized tomato de-seeded and chopped into pieces
  • 1 medium-sized onion Julienne
  • ½ red bell pepper Julienne
  • ½ green bell pepper Julienne
  • ½ yellow bell pepper Julienne
  • 6 baby corn slit into halves
  • 10 basil leaves Julienne

For Garnish:

  • 1 tablespoon Italian seasoning
  • 1 tablespoon red chilli flake
  • A twig of rosemary for garnish
