How to Roast Cauliflower in the Oven (Crispy & Easy)

This is a simple, foolproof guide for how to roast cauliflower in the oven until the edges turn golden and crispy — no soggy, steamed-tasting florets here. Just garlic, Italian seasoning, black pepper, and a bake-then-broil technique that gives real texture without deep frying anything. It’s naturally vegan, gluten-free, and low-carb, and works equally well as a snack on its own, a salad topper, or a side dish.

Why Roast Cauliflower in the Oven?

Roasting brings out a completely different side of cauliflower than steaming or boiling. The dry heat caramelizes the natural sugars in the vegetable, giving the edges a deep golden color and a slightly nutty, savory flavor that plain steamed cauliflower never develops. It’s also a genuinely simple way to turn a bland, health-food-aisle vegetable into something people actually reach for as a snack.

What Temperature Should You Roast Cauliflower At?

This recipe roasts at 400°F (200°C), which is the standard, reliable temperature for getting golden, caramelized edges without drying out the inside of the florets. Going much lower tends to steam the cauliflower instead of roasting it; going much higher risks burning the edges before the inside cooks through.

How to Cut and Clean Cauliflower Before Roasting

To cut the cauliflower into florets:

  1. Remove the leaves from the cauliflower head.
  2. Place the whole cauliflower on a cutting board and cut it into 2 halves.
  3. Cut each half into quarters.
  4. Cut the quarters into individual florets, breaking any larger pieces down further so they’re roughly even in size — this matters for even roasting.

To clean the cauliflower:

  1. Wash the florets under running water.
  2. Submerge the florets fully in a deep bowl of water with 1 tablespoon of salt.
  3. Let them soak for 30 minutes — this is a traditional step to help draw out any insects that can sometimes be present in fresh cauliflower heads, and it’s worth doing even if you don’t think it’s necessary.
  4. Drain and pat the florets dry before roasting — dry florets crisp up far better than damp ones.

Ingredients for Oven Roasted Cauliflower

  • Cauliflower florets – cut into even, bite-sized pieces (or leave larger sections intact for cauliflower “steaks” if you prefer).
  • Garlic, minced – for savory depth.
  • Extra-virgin olive oil – helps the seasoning stick and promotes browning; any neutral cooking oil works as a substitute.
  • Italian seasoning – the primary flavor base in this version.
  • Black pepper powder – for a mild kick.
  • Salt – to taste.

Optional additions: paprika for a smokier, spicier version, or shredded cheese added in the last few minutes of baking for a cheesy roasted cauliflower.

How to Roast Cauliflower in the Oven — Step-by-Step

Step 1: Make the Marinade In a mixing bowl, combine olive oil, minced garlic, black pepper powder, Italian seasoning, and salt to taste.

Step 2: Coat the Florets Add the cauliflower florets to the bowl and toss well, making sure each piece is evenly coated with the marinade.

Step 3: Preheat the Oven Preheat your oven to 400°F (200°C) for 5 minutes.

Step 4: Arrange on the Tray Line a baking tray with parchment paper and spread the cauliflower out in a single layer, without overcrowding — crowded florets steam instead of crisping.

Step 5: Bake Bake for 10 minutes.

Step 6: Broil to Finish Remove the tray, toss the florets again, then switch the oven to broil and move the tray to the upper rack. Broil for another 10 minutes, until the edges turn deeply golden.

This bake-then-broil combination is really the key technique here — baking cooks the cauliflower through, while the finishing broil is what gives you genuinely crispy, caramelized edges instead of just soft roasted florets.

How to Serve Roasted Cauliflower

Eat it straight off the tray or dip it in mayo or your favorite sauce. It also works well tossed into salads, stirred into a roasted cauliflower soup, or added to stir fries for extra texture. The same technique and marinade work well with broccoli too, if you want to switch things up.

Frequently Asked Questions

What temperature do you roast cauliflower at? 400°F (200°C) is the standard temperature for roasted cauliflower — hot enough to caramelize the edges without steaming the inside, but not so hot that it burns before cooking through.

How long does it take to roast cauliflower? This recipe takes about 20 minutes total: 10 minutes of baking, followed by 10 minutes under the broiler to finish crisping the edges.

Do I need to boil or blanch cauliflower before roasting it? No — this recipe uses raw cauliflower florets straight from the marinade into the oven. Pre-boiling isn’t necessary and can actually make the florets soggier once roasted.

Why is my roasted cauliflower soggy instead of crispy? The most common causes are overcrowding the baking tray (florets steam each other instead of roasting) or not drying the florets thoroughly after washing. Give the florets space on the tray, and pat them dry before tossing them in the marinade.

What does “OTG” mean, and can I use a regular oven instead? OTG stands for “oven toaster griller,” a common home oven type in India. If you’re using a standard Western-style oven (conventional or convection) or even a large countertop toaster oven, the same times and temperatures in this recipe will work fine — you don’t need an OTG specifically.

Can I roast frozen cauliflower using this method? Fresh cauliflower gives the best texture, since frozen florets release extra moisture as they thaw, which can prevent good caramelization. If using frozen, pat the florets very dry first and expect a slightly longer roasting time.

Is roasted cauliflower keto and low-carb friendly? Yes — cauliflower is naturally low in carbohydrates, and this recipe uses no flour, breading, or added sugar, making it a good fit for keto, low-carb, gluten-free, and vegan diets.

Ingredients

  • 1 cauliflower chopped into florets
  • 2 tablespoons garlic minced
  • 3 tablespoons extra-virgin olive oil
  • 4 tablespoons Italian seasoning
  • 1 tablespoon black pepper powder
  • Salt to taste

Instructions

  • In a mixing bowl, combine olive oil, minced garlic, black pepper powder, Italian seasoning, and salt.
  • Add the cauliflower florets and toss well until evenly coated.
  • Preheat the oven to 400°F (200°C) for 5 minutes.
  • Line a baking tray with parchment paper and spread the cauliflower in a single layer.
  • Bake for 10 minutes.
  • Remove, toss again, then switch to broil and move the tray to the upper rack. Broil for another 10 minutes until golden.

Notes

Don't overcrowd the tray — florets need space to crisp rather than steam.
The bake-then-broil combination is the key to crispy edges; skipping the broil step will give you softer, less caramelized results.
Works equally well with broccoli using the same method and marinade.
