Onion Rava Fry | Shallow Fried Onion

Rava fried onion slices is a delicious and easy Goan starter recipe made by shallow frying spicy onion slices. We call it onion fodi in Goa. This recipe is very simple and tasty too. We have been making rava fried onion since a long time. These days I was posting a picture on Instagram of what my quarantine lunch looks like and many people came asking for the recipe of this delicious rava onion fry or tava fried onion.

This onion semolina fry is a Goan recipe. We make different types of rava fried recipes like rava fried lady fingers, rava fried ridge gourd, etc on the days when we donโ€™t eat fish.

Onions are easily available in every Indian home and rava/sooji (semolina) is also available. So today let us see how to make a delicious onion starter which is completely different from batter fried onion rings.

I am sure after posting this recipe on my website, lot of versions and videos of the recipe will be out just like rava fried potato and rava fried brinjal. Anyways knowledge is meant to share. It so professional if a credit to the original recipe is given.

What type of onion can be used to make this spicy onion fry coated with semolina?

You can use any type of medium to big sized round onion. White or even red onion can be used.

How to cut onion to make this easy starter?

Peel the onion. Cut and discard the edges. Hold the onion and cut into ยผ inch slices. If you make thin slices, the onion rings will come out while coating with semolina and while frying.

What are the ingredients to make onion rava fry?

  1. Onion: As mentioned earlier, use any type of big to medium sized red or white onion. Always use round onions in this recipe.
  2. Semolina/rava/sooji: Medium to thin semolina can be used. No need to roast semolina.
  3. Spices: Red chili powder(paprika) and turmeric powder(curry powder) can be used. These are available in any Indian stores.
  4. Oil: For shallow frying the spicy onion slices, use any type of cooking oil.

What is the alternative to using rava(semolina)?

Rice flour can be used if semolina(sooji) is not available.

Let us go through the steps to make semolina coated onion slices:

  1. First peel the onion, discard the edges and cut into ยผ inch thick slices.
  2. Take a small mixing bowl and make a thick paste with red chili powder, turmeric powder and salt.
  3. Apply the spicy paste to the onion slices and keep aside for 10 minutes.
  4. Take a plate and mix sooji(semolina), turmeric powder, chili powder and salt.
  5. Heat a frying pan and spread oil. Keep the heat to low.
  6. Coat the spicy onion slices with semolina and place them on the frying pan.
  7. Spread little oil on the onion slices and close the lid.
  8. After 10 minutes, flip them to other side and fry for 10 more minutes.
  9. Sprinkle 2 tablespoon water while frying the semolina coated onion slices and close the lid. In this way you can use less oil while shallow frying.
  10. Let the onion slices get shallow fried for 5 more minutes. Then switch off the heat/gas. Keep the lid of frying pan closed till you serve the onion starter. In this way the the onion slices will continue to get cooked even after the heat is turned off.

Steps to make tava fried onion with rava

How to serve this delicious Goan rava fried recipe?

In Goa, we serve this onion rava fry with steamed rice, a curry like ambadyachi uddamethi, stir fry like cluster beans stir fry, sol kadi, masala papad, raw mango pickle and salad. It can be served for lunch or dinner. You can even serve it as an appetizer for any small home party.

  • Frying pan

Ingredients

  • 2 medium sized onions
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon Salt
  • 4 tablespoon oil for shallow frying
  • For the coating:
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon turmeric powder
  • 4 tablespoon rava / sooji / semolina
  • To taste Salt

Instructions

  • Peel the onion, discard the edges and cut into ยผ inch thick slices.
  • Take a small mixing bowl and make a thick paste with red chili powder, turmeric powder and salt.
  • Apply the spicy paste to the onion slices and keep aside for 10 minutes.
  • Take a plate and mix the ingredients meant for coating .
  • Heat a frying pan and spread oil. Keep the heat to low.
  • Coat the spicy onion slices with semolina
  • Place them on the frying pan.
  • Spread little oil on the onion slices and close the lid.
  • After 10 minutes, flip them to other side and fry for 10 more minutes.
  • Sprinkle 2 tablespoon water while frying the semolina coated onion slices and close the lid. In this way you can use less oil while shallow frying.
  • Let the onion slices get shallow fried for 5 more minutes and then switch off the heat/gas.
  • Keep the lid of frying pan closed till you serve the onion starter. In this way the the onion slices will continue to get cooked even after the heat is turned off.

Notes

  1. Sprinkling water while shallow frying, ensures that less oil is used in cooking. This is my moms tip.
  2. Another tip is to cover the frying pan while shallow frying. This ensures that cooking is faster as heat is preserved.
  3. After cooking, keep the lid of frying pan closed till you serve the dish. The rava fried onion slices will continue to get cooked even after the heat if turned off and will also remain warm.
