During my recent trip to Goa, I got back 3 dozens of mangoes to Bangalore. All those mangoes are from the mango tree which grew in my backyard. My brother-in-law managed to pluck some mangoes and packed the best ones for me to take back to Bangalore. Now the question was what to do with those many mangoes? I ate some of them and made juice out of a few more. Then I started experimenting and creating mango recipes as usual. An idea stuck my mind to make Mango Salsa or Mango Salad. I had prepared this last year during the mango season. But I never clicked photo as it got finished within minutes. This time I remembered the recipe and also thought of sharing it with you all. Hope you like it and I am sure you will try it during this mango season.
Ingredients:
2 Mangoes which are ripe and firm
1/2 Capsicum
1/2 medium sized onion
1 medium sized tomato
2 tablespoon cilantro / coriander leaves
For Dressing:
1/4 teaspoon lemon juice
1/2 tablespoon olive oil
1 tablespoon Ranch
Procedure:
Chop all the ingredients finely.
Toss all the ingredients in a serving bowl. Add the dressing ingredients and toss well.
Serve fresh.
