Ingredients used for making crispy air fryer potato wedges:

  • Potato: Use firm, fresh potatoes to make these crispy fried potato wedges.
  • Seasoning: I have used black pepper powder, garlic powder, Italian seasoning, grated parmesan, and salt. The quantity of seasonings can be altered slightly as per taste.
  • Oil: Olive oil is used in this recipe.
  • Garnish: For garnish I have used parsley. You can also add a slice of lemon for garnish.

Step by step instructions to make the best air fryer potato wedges:

  • Wash the potatoes and peel them. You may even retain the peel as it has lots of nutrition, but I decided to peel the potato.
  • Cut the potatoes lengthwise into half and then cut them into wedges.
  • Soak them in water for 20 minutes. This removes the starch and helps make the fries crispy. Pat dry using paper towel after soaking and before adding the seasoning.
  • In a mixing bowl, add the potato wedges, garlic powder, black pepper powder, parsley, Parmesan, Italian seasoning, salt, olive oil and toss well.
  • Spray the air fryer with oil or coat the base of air fryer basket with little olive oil.
  • Place the potato wedges in the air fryer basket. Air fry for 20 minutes at 200C or 392 F.
  • After every 5 minutes, open the air fryer basket, shake it, and spread evenly.
  • Serve hot with ketchup or red chili sauce or any sauce that you like.

FAQs

1. Do I need to soak potato wedges before air frying?
Soaking is optional but helps. A 20–30 minute soak in cold water draws out surface starch, which gives crisper edges and stops the wedges from sticking together. Always pat them completely dry before adding oil.

2. How long do you cook potato wedges in the air fryer?
At 200°C (392°F), about 20 minutes, shaking the basket halfway. Thicker wedges may need 3–5 extra minutes.

3. Do I need to preheat the air fryer?
Preheating for 3–5 minutes gives a crisper crust right from the start. If yours has no preheat setting, add an extra 2 minutes.

4. How do I make air fryer potato wedges crispy?
Soak and dry them well, use just enough oil to coat, and cook in a single layer without crowding. Add the parmesan in the last 5 minutes so it doesn’t burn.

5. Should I peel the potatoes?
No. The skin crisps up nicely and adds texture. Scrub the potatoes well before cutting.

6. What are the best potatoes for wedges?
Russet or Yukon Gold in the US, or any starchy medium potato elsewhere. They turn fluffy inside and crisp outside.

7. Can I make these without parmesan?
Yes. Skip it for a vegan version, or use nutritional yeast. The garlic, pepper and Italian seasoning still give plenty of flavor.

8. How many wedges fit in the air fryer?
Keep them in a single layer. For 3–4 potatoes, cook in two batches in a small basket.

9. Can I reheat leftover wedges?
Yes. Air fry at 180°C (356°F) for 3–4 minutes to bring back the crunch. Don’t microwave them, as they’ll go soft.

10. What’s the difference between potato wedges and potato slices?
Wedges are thick, fluffy and parmesan-herb seasoned, about 20 minutes. Air fryer potato slices are thinner and crisper with a paprika and chili spice mix, about 25 minutes. Choose wedges for a dip-friendly side, slices for a snack.

Air Fryer Potato Wedge Variations

You can bake a whole potato in an air fryer; you can even chop into cubes or slice and fry them. For the air fried potato wedges, you can try different seasoning like adding 1 teaspoon paprika or Cajun seasoning. You can also try adding a teaspoon of oregano.

I just bought a bag of frozen wedges that look almost exactly like yours…with the intent on air frying them. But I think your recipe is delicious and worth a try. Maybe it will replace my favourite frozen wedges.
