Will okra turn slimy in air fryer?

Wash and pat dry okra completely. There should be no traces of water. After it is pat dried, coat it with spices and flour and air fry it. Air frying okra at elevated temperature ensures that the sliminess of okra is removed and instead it turns into crispy fried okra.

What goes in making air fryer roasted okra?

  • Okra: Use fresh and crispy okra. Okra should be dry before cooking in air fryer.
  • Spices: Different spices like cumin powder, turmeric powder, red chili powder or red chili flakes and coriander powder is applied to the okra before frying it in an air fryer.
  • Flour: I have used chickpea flour or besan in this healthy fried okra recipe. You can replace chickpea flour with corn flour or plain flour or rice flour.
  • Oil: Olive oil is used in this air fryer lady fingers recipe. You may replace olive oil with avocado oil or canola oil or peanut oil.
  • Garnish: For garnish I have used lemon slices. You may add some drops of squeezed lemon juice on the crispy okra before serving. I love to have fried okra as it is right out of the air fryer.

How to cook okra in air fryer?

  • Wash okra and pat dry. Remove all traces of water from the okra.
  • Cut the stem and discard. Then slit the okra into two pieces. Do not de-seed.
  • Add all slit okra in a mixing bowl.
  • Toss the okra, spices namely coriander powder, turmeric powder, cumin powder, red chili flakes, salt, chickpea flour and oil. Ensure that the okra is nicely coated by the spices and flour.
  • Coat the air fryer basket with cooking spray. You may also coat the basket with 1 teaspoon oil.
  • Place the okra in air fryer basket in a single layer and air fry at 200 C or 392F at 12 minutes shaking halfway through at around 5 minutes. Air fry in batches if the quantity of okra is more but remember not to overcrowd the basket as it may make the okra slimy.

Can we make frozen okra in air fryer?

Yes, we can make the same okra recipe with frozen okra in an air fryer. Just air fryer at 400F for 15 minutes till the okra turns crispy, shaking the basket once or twice in between. However, I do not recommend using frozen okra to make this recipe. Using fresh okra yields best results in an air fryer. Frozen okra can be used for stew.

Also try other air fryer recipes like:

  • Air fryer potato wedges
  • Air fryer mushroom
  • Air fryer shrimp
  • Air fryer chicken breast

Notes to keep in mind before making low card fried okra:

  • Before cooking lady finger in air fryer, ensure that it is dry. If there is water on the okra it will turn slimy while air frying.
  • You may not de-seed the okra. It is optional.
  • Air fry okra in a single layer and avoid over crowding the air fryer mesh or basket. For larger quantity, air fry in batches.
  • The cooking time may differ slightly depending on the type of air fryer that you are using.
  • Use fresh okra in this recipe. I do not recommend using frozen okra.

Okra is one of those vegetables I really like but don’t know how to cook besides roasting it so I’m glad to have found this recipe. I really liked the turmeric and cumin, I usually just use salt and garlic, it was delicious!

Every year I end up with an abundance of okra from our garden so I’m pleased to know I can now prepare it in the air fryer. This recipe was so simple and the result was better than expected. Not slimy at all and perfectly cooked.
