Stuffed Brinjal | Bharli Vangi ( Step – by – Step )

Delicious masala stuffed brinjal made in Goan style with spices, coconut, jaggery and tamarind. Tastes spicy,sweet and tangy. Serve it with rotis, chapatis or rice.

Stuffed Brinjal or Bharli Vangi or Bharwan Bainganย is a dish which I loved since childhood. My mom has a unique style of preparing Goan dish. She had prepared this dish for a cookery contest and had won 1st place.ย My mom in law has another style of preparing this. The recipe discussed below is what I learnt from my mom in law as my hubby loves this dish. I prepare each and everything that my hubby loves. A well-known saying goes as โ€œThe way to a manโ€™s heart is through his stomachโ€.

Stuffed Brinjal

During my recent trip to Goa, I made this stuffed brinjal Goan style for my parents. I went to Gandhi Market in Margao and hunted for the best eggplants/brinjals. With all my love and dedication I prepared this dish. My parents, my brother and my hubby loved it. My dad said that this is the best dish that he has eaten in Goa and also said that in hotels also he wonโ€™t get it. That time I felt, I wish I was staying in Goa. I could cook yummy delicacies for my dad.

How to make stuffed brinjal step by step with pictures?

  1. Cut the stem of the brinjal and make 4 slits vertically till 1/4th from the bottom. Do not cut them fully. Immerse them in a bowl of water to which salt is added for around half an hour.
  2. Add all the masalas in a grinder/mixer along with some onion to a thick masala.
  3. Heat a frying pan and add oil and fry onions. Add the ginger garlic paste and fry.
    Then add tomatoes and fry. Pour the ground mixture from mixer/grinder/blender. Next add jaggery and mix well.
    Add salt as per taste and mix.
  4. Carefully stuff the prepared masala into the brinjals.
  5. Place them in the same pan and add little water to the rest of the masala and keep the pan covered.
  6. Occasionally turn the brinjals.
    Cook for 30 minutes.

How to serve masala stuffed brinjal?

You can serve this stuffed brinjal masala dry with rotis or chapatis. You can even serve it as a side dish with rice, tomato saar, teasel gourd fry, kokum kadai and grated carrot salad.

Stuffed Brinjal / Bharli Vangi

Equipment

  • Kadai
  • Mixer/gringer

Ingredients

  • 5 โ€“ 6 small brinjals/eggplants
  • 2 onions
  • 1 to mato
  • 1 marble sized ball tamarind
  • 1 tablespoon ginger garlic paste made out of 1/2 inch ginger and 5 garlic cloves
  • 4 cloves garlic
  • 1/2 cup grated coconut
  • 1 tablespoon jaggery
  • 5 โ€“ 6 peppercorns
  • 1/2 teaspoon coriander seeds
  • 1/2 teaspoon turmeric powder
  • 4 red chilies
  • 1 tablespoon garam masala
  • 2 cloves
  • 1/2 teaspoon cumin seeds

Instructions

  • Cut the stem of the brinjal and make 4 slits vertically till 1/4th from the bottom. Do not cut them fully. Immerse them in a bowl of water to which salt is added for around half an hour.
  • Grind the grated coconut, tamarind, red chilies, 4 cloves garlic, turmeric powder, peppercorns, cloves and garam masala. Add 2 tablespoon chopped onions and grind it again.
  • In a frying pan, add oil and fry onions. Add the ginger garlic paste, tomatoes and fry till tomatoes turn mushy. Pour the ground mixture, jaggery and stir well.
  • Add salt as per taste.
  • Now carefully stuff the masala into the brinjals.
  • Keep them in the same pan.
  • Add little water to the rest of the masala and keep the pan covered.
  • Occasionally turn the brinjals.
  • Let this get cooked for 30 minutes.
  • Serve it with love along with either rice or chapatis
