Savory Veggie Corn Cheese Muffins

Easy and quick recipe is this Savory corn cheese muffins which are loaded with vegetables, sweet corn and cheese. These are ideal for the kids snack box. You can make these best corn cheese muffins and serve them during evening tea time. Looking for a delicious and nutritious snack? Try these Savory veggie corn cheese muffins. These are light and gets ready in 25 to 30 minutes. I had prepared these corn cheese savory muffins for a contest in 2014. Now I bake it often for my kiddo who loves to eat them after coming home from school.

Ingredients to prepare savory veggie corn cheese muffins:

  1. All-purpose flour: I have used all-purpose flour in this recipe. You can even use Maida.
  2. Sweet corn kernels: I have used fresh sweet corn kernels which I had removed from the American corn on the cob. You can use frozen ones too. Just thaw before using them in the recipe.
  3. Capsicum: Capsicum is also known as bell pepper. I used the green bell pepper in this recipe.
  4. Onion, Coriander: Vegetables like onion and coriander add more flavor to the recipe.
  5. Grated cheese: Makes the muffins cheesy and yummy.
  6. Seasoning: Chili flakes, Italian seasoning and salt. These are the only tastemakers added to this corn cheese muffin recipe.
  7. Egg: I have added 1 egg to this recipe.
  8. Yogurt: You can use thick curd if you cannot find yogurt. If you are making eggless muffin, you can skip adding egg and add another ½ cup yogurt. However, I have not tried the eggless version.
  9. Olive oil: 1/4th cup olive oil is added to the vegetable muffins. Helps in baking.

Savory Veggie Corn Cheese Muffins

Steps to prepare savory corn cheese muffins:

  1. Take two bowls. I will say, bowl1 and bowl2.
  2. In bowl1, beat eat the egg and mix yogurt. Add olive oil, mix and keep aside.
  3. In bowl2, mix the flour and other ingredients and keep aside.
  4. Add the ingredients from bowl1 to bowl2 mixing slowly.
  5. Pre-heat the microwave in convection mode to 180 degree for 5 minutes.
  6. Grease the muffin tray.
  7. Spoon the muffin tray with the mixture. Brush some olive oil on top of the muffin mixture. This gives it a golden color.
  8. Bake for 20 minutes or until golden brown.

How to serve the cheese muffins with corn and vegetables?

  • Serve these muffins with vegetables for breakfast or in the evening during tea time.
  • You can even pack it in the lunch box to have during the break hours.

Ingredients

  • 1 cup All purpose flour/maida
  • 1/2 cup sweet corn kernels
  • 1/2 cup chopped capsicum
  • 1/4 cup chopped coriander
  • 1/4 cup chopped onion
  • 1/2 cup grated cheese
  • 2 tablespoon chili flakes
  • 3 tablespoon Italian seasonings
  • 1/2 teaspoon salt
  • 1 Egg
  • 3/4 cup yogurt
  • 1/4 cup olive oil

    Tried these last night… did u fill the mould till the brim?? I filled them 3/4th (keeping cup cakes in mind 😀 😀 )
    Then realised i had made a mistake 🙂 They tasted very good…i gonna make them again for my blog and will definitely mention you in the post 🙂

    Hi Raksha… I tried this out yesterday and the taste was superb . However I used muffin liners and sprayed it with butter . After cooling down the muffins could not come out easily as the batter was stuck to the liners. Are these supposed to be baked directly in the muffin pan . How do I avoid the batter sticking to the liners. I skipped the egg and added some extra oil .

      Yes bake them directly in muffin pan. I did not use muffin liner too.

    Hey what could be a substitute for Italian seasoning? I have oregano but not sure if it would taste nice in such big quantity ( 3 tablespoons)

        Flax seeds powder taste yukk in cake or this kuffina .add 1 tso baking powder and 1/4 two of baking soda it work well.

      There is slight difference. In US we can get All purpose flour. In India, we can use maida.
