Different ways to cook Goan pineapple jam or ansache mel:

In Goa, this jam is known as โ€œansache melโ€ or โ€œansacho halwoโ€.We make ansache jam at home using 2 methods. One is dry method known as โ€œansacho halwoโ€ wherein pineapple is cooked till sugar syrup dries and other is the wet method known as โ€œansache melโ€ in which pineapple is served with sugar syrup.

During this lockdown, I got a chance to make many recipes using pineapples. A pushcart vendor was selling pineapples at a relatively low price. The pineapples were fresh, so my hubby purchased all of them (10 โ€“ 15) and made the pushcart vendor very happy.

Jam made with pineapple

After seeing the pineapples, my daughter told me to make jam as she loves to have it with chapati just like homemade mango jam or โ€œambyacho halwoโ€. We also make ansache godmel just like raw mango god lonche or god mel.

4 simple ingredients to make preservative free jam with pineapple:

  • Pineapple: The star ingredient. Use fresh, ripe, firm and juicy pineapple to make this recipe.
  • Sugar: Sugar brings sweetness in the jam recipe. Quantity can be increased or reduced as per the sweetness of pineapples.
  • Lime water: Little bit of lime water is added to jam. Lime water lowers the pH factor of jam.
  • Water: Boiled or RO water should be added while making jam.

How to make pineapple jam?

  • Add finely chopped or grated pineapple and water in a saucepan or kadai and cook on low-medium heat for 30 minutes. The pineapple should turn soft.
  • Add lime juice and stir. Add sugar and mix well.
  • Cook till the pineapple and sugar mixture thickens. One string consistency should be obtained from the sugar solution.
  • After cooling, transfer the jam in airtight jar. Next day store it in refrigerator. Remains good for up to 2 weeks.

Notes

  • In step 1, if pineapple does not turn soft and water evaporates, then add little water and cook again till pineapple turns soft.
  • To check for one string consistency, take a plate and add few drops of sugar syrup from the saucepan. After it cools down, using thumb and forefinger, stick the syrup between them. Release the 2 fingers. If single thread is obtained when the two fingers are released, it means one string consistency is achieved.
  • Instead of grating pineapple or chopping into small pieces, you could also grind it coarsely.
