Eggless Marie Biscuit Pudding

Eggless Marie biscuit pudding is a no bake dessert. It is very easy to make and needs only 7 ingredients. This can be quickly prepared for any occasions and parties. The pudding has flavors of chocolate on the top layer and mild coffee flavor for the biscuits at the bottom. I always wanted to try this simple east Marie biscuit pudding. In my childhood, my Mom used to prepare the Marie biscuit cake. This pudding with Marie biscuits is an easy no bake dessert.

Eggless Marie Biscuit Pudding

The best part is that it is an eggless pudding. So even the pure vegetarian friends can also have Marie biscuit pudding dessert.

This Marie biscuit pudding custard is takes less than 20 minutes to prepare. So, if you have some guests coming home, just make the pudding, cool and refrigerate. Serve it chilled to your guests.

To make eggless Marie biscuit pudding vegan, you can use soymilk instead of cow milk.

Let us see the Marie biscuit pudding ingredients:

  1. Marie biscuits: 1 packet of simple Marie biscuit is needed in this recipe. That should be roughly around 15 biscuits.
  2. Milk: I have used cowโ€™s milk(regular) in this recipe. You can even use slim milk or condensed milk. To make it vegan use soymilk.
  3. Sugar: This is used for adding sweetness to the eggless dessert.
  4. Cornflour: This is used to condense the pudding and give it a thick texture. It also brings out the chocolate flavor that is provided by cocoa and sugar.
  5. Cocoa: This is used for lending a mild chocolate flavor to the recipe.
  6. Vanilla custard powder: This helps in making yummy and delicious creamy pudding.
  7. Coffee: Instant coffee is used in this recipe just for coating the biscuits. This provides a mild coffee flavor too.
  8. Nuts: Nuts are used for garnishing. I have used chopped pistachios.
  9. Chocolate: For this you can use any chocolate like Cadbury dairy milk and grate it a bit. This is also used for garnishing and is optional.

Steps to make eggless biscuit pudding

Let us see the steps to make eggless pudding with biscuits:

  1. Mix the instant coffee in just 6 tablespoon hot water. Quickly dip each biscuit in coffee water one by one and arrange them in the serving dish.
  2. Take a cup and add cornflour, custard powder, cocoa and 1/4 cup of cold milk. Make paste ensuring that no lumps are formed.
  3. In a saucepan, pour milk. Add sugar to it and mix.
  4. When the milk starts boiling add the paste made from cornflour, custard powder, cocoa and 1/4 cup milk. Keep on stirring till it starts thickening. It should be of pouring consistency.
  5. Pour it all over the arranged biscuits.
  6. Let it cool slightly.
  7. Garnish with chopped nuts and the chocolate shavings.
  8. Refrigerate and serve chilled.

The biscuit pudding will stay good in fridge for up to 2 days.

Equipment

  • Sauce pan
  • Spatula

Ingredients

  • 1 Packet Marie Biscuits
  • 500 ml Milk
  • 5 tablespoon Sugar
  • 2 tablespoon Cornflour
  • 2 tablespoon Vanilla Custard Powder
  • 3 tablespoon Cocoa powder
  • 1 teaspoon Instant Coffee powder
  • Few Pistachios, almonds and grated chocolate for garnishing
  • 5 tablespoon hot water

Instructions

  • Mix the instant coffee in hot water, dip the biscuits and arrange them in the serving tray.
  • Make a paste out of cornflour, custard powder, cocoa and 1/4 cup of cold milk. Ensure that no lumps are formed.
  • In a separate pan, boil the milk. Add sugar to it.
  • When the milk starts boiling add the paste made from cornflour, custard powder, cocoa and 1/4 cup milk. Keep on stirring till it starts thickening. It should be of pouring consistency.
  • Pour it all over the arranged biscuits.
  • Garnish it with the chopped nuts and grated chocolate.
  • Refrigerate and serve chilled ????

Notes

  • Do not soak biscuits in hot coffee water. Just dip and take it out.
  • If chocolate shavings are not available, just grate any chocolate and use it for garnish.
