Lychee pudding is a tasty and refreshing dessert which is a must try litchi recipe during the lychee season. This lychee dessert easy recipe is a no gelatin and no agar agar recipe and can be made under 30 minutes. This litchi delight is a perfect treat for any party and can even be served in lychee pudding cups. Try out this yummy lychee recipe and impress everyone.

The litchi dessert mentioned today is a lychee pudding with cornflour and is a very litchi delight recipe. Lychee is pronounced in two ways. British say “lie-chee” and Americans say “lee-chee”. This lychee sweet pudding is made with just 5 easy ingredients.

What does lychee taste like?

Lychee fruit is aromatic, sweet, and slightly floral in taste with a hint of citrus. The aroma of lychee is like that of rose is what I felt like when I had it first time.

Ingredients that go in making lychee pudding easy recipe:

  • Lychee: Use fresh, firm lychee to make this litchi delight. Discard any litchis which are unfresh and soft.
  • Milk: I have used normal cow milk to make this lychee dessert. You can even use high fat milk. For making vegan lychee pudding, try using coconut milk instead of cow milk.
  • Sugar: For adding sweetness, I have added sugar in this litchi dessert recipe. You may alter the sugar quantity depending on the sweetness of the lychee fruit.
  • Cornflour: Cornflour is mixed with little water and is added to thicken the litchi pudding.
  • Mint leaf: Mint leaf is optional and is only added for garnish to make the dessert look appealing.

How to make lychee pudding recipe:

  • Wash and peel the litchi. Cut them into small pieces.
  • In a small bowl, add cornflour and little water and make slurry.
  • Add the chopped lychees in a blender and make puree.
  • Heat a sauce pan and add milk.
  • When the milk is about to start boiling, add the lychee puree and stir.
  • Add sugar and mix well.
  • Let it start boiling.

  • Cook till the pudding thickens.
  • Switch off the gas.
  • Add some litchi pieces in a serving bowl and pour the pudding in the serving bowl.
  • Cool and refrigerate for 5-6 hours or overnight.
  • While serving, invert the pudding on a serving plate.
  • Garnish with chopped litchi pieces and mint leaf.
  • Serve cold.

Litchi benefits:

Litchis are rich in antioxidants like rutin and epicatechin, minerals like potassium and copper and vitamins like vitamin C. Lychee are composed of water(82%) and carb(16.5%). Since lychees are rich in copper and potassium, they may improve heart health when eaten in moderation.

The antioxidants like rutin and epicatechin helps fight certain diseases like cancer and diabetes and improves heart health. More information can be found on healthline.

Lychee side effects:

Litchis are safe to consume when eaten in moderation. However, do not consume unripened litchis specially the small green ones on an empty stomach as they contain certain toxins which may cause vomiting and other side effects.

  • 20 lychees
  • 1 cup milk
  • 6 tablespoon sugar
  • 5 tablespoon cornflour
  • Little water

Instructions

    I’ve never had lychee that I am aware of. We’ve been trying new produce each week we find at the grocery store. I’ll definitely be on the lookout – I love pudding so this sounds like a great way to try lychee for the first time!
