The classic summer salad recipe is quick and gets ready in just 5 minutes and is a favorite at my home. Cucumbers and onions are sliced and tossed with a refreshing lemon dressing.  Make your summer meals tastier with this refreshing cucumber onion salad! Easy cucumber onion salad

Cucumber onion dill salad is a quite simple summer side dish recipe and is so easy to prepare. I have added lemon juice and honey to this healthy cucumber salad.

The combination of lemon juice and honey creates a refreshing, balanced dressing that enhances the natural flavours of the cucumbers and onions making this an easy cucumber salad recipe for summer BBQs.

You can substitute vinegar for lime juice and replace honey with sugar in this Refreshing summer cucumber salad. If you’re using vinegar, be sure to add sugar to the easy cucumber salad recipe to balance out the strong vinegar flavour.

Ingredients for making cucumber onion salad

  • Cucumber: Any type of cucumbers may be used in this cucumber salad recipe. I prefer using English cucumbers with skin. Ensure that the cucumbers are firm and fresh. This will make the salad crisp.
  • Onion: The salad tastes best with red onion. However, you may use white onion too.
  • Dill: Use fresh dill in this recipe for an enhanced flavour. You may replace dill with other herbs like parsley or basil.

For the dressing:

  • Lemon juice: Lemon juice brings a bright flavour to the salad. Use freshly squeezed lemon juice for a light, fresh and refreshing taste.
  • Oil: I have added olive oil in this recipe. You may replace it with any light tasting oil if olive oil is unavailable.
  • Honey: Honey helps to balance the acidity of lemon juice and provides a mild sweetness that complements the tanginess.
  • Salt and pepper: Salt enhances the natural flavours of cucumbers, onions, and dill, while also drawing out moisture from the vegetables, making the salad more flavourful. Pepper adds a subtle warmth and creates a contrast, complementing the freshness of the cucumbers and the pungency of the onions.

How to prepare refreshing summer dill cucumber salad

  • To a small mixing bowl, add olive oil, lemon juice, honey, salt, pepper, and whisk.

Ingredients

  • 2 medium sized cucumbers thinly sliced
  • 1 small red onion thinly sliced
  • 2 tablespoon fresh dill finely chopped
  • 4 tablespoon olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 tablespoon honey
  • ½ teaspoon pepper powder
  • ¼ teaspoon salt or as per taste

Instructions

Let us make the salad dressing:

  • To a small mixing bowl, add olive oil, lemon juice, honey, salt, pepper, and whisk.

Let us make the cucumber and onion salad:

  • To a large mixing bowl, add sliced cucumbers, sliced red onion and dill leaves.
