Coconut Shrimp

Coconut Shrimp is an easy appetizer recipe made with shrimp and coconut. This crunchy coconut fried shrimp recipe can either be shallow fried, deep fried, air fried, baked or grilled on skewers. This shrimp fried appetizer can be served as party appetizer or finger food and gets ready in under 10 minutes. It is so good, that it is crispy on outside, succulent, and juicy inside.

I love shrimps and so I make different recipes with shrimps. Our favourite are semolina coated shrimp and golden fried shrimps. But this homemade coconut shrimp was a winner. My daughter cam running to the kitchen and asked what was cooking. She even looked out for the ingredients and loved the mild coconut aroma. The coconut coated shrimps were cleared in few minutes. This is the best ever coconut shrimp recipe I have ever made.

The shrimp recipe is easy to make. Just take cleaned, deveined shrimps, roll it in all-purpose flour, dunk in beaten egg and then roll it in coconut flour and breadcrumbs or panko. I will recommend using panko because it stays crispier for long time.

The best part is that this fried shrimp recipe can be made with ingredients easily available in the kitchen pantry like flour, eggs, breadcrumbs, salt, and pepper. You might have to get coconut flakes or coconut flour.

What are the ingredients used in making easy coconut shrimp recipe?

  • Shrimps: Use any type of shrimp or prawns to make this recipe. If you use large or jumbo shrimp, you will have to fry it slightly longer.
  • Flour:  Use all purpose flour to first coast the shrimp. Coating in all purpose flour before coating with beaten egg, ensures that beaten egg sticks to the shrimp.
  • Eggs: Use chicken eggs in this recipe for coating the shrimp. After coating the shrimp in beaten eggs mixture, the coconut flakes and breadcrumbs stick well to the shrimps.
  • Seasoning: Salt and pepper is used in this recipe for seasoning. You can add paprika too if you need slightly spicy fried shrimps.
  • Coconut flour: Unsweetened coconut flour or coconut flakes should be used in this recipe.
  • Breadcrumbs: Use breadcrumbs along with coconut flakes to coat the shrimp after coating with egg batter.
  • Oil: Use any type of vegetable oil or canola oil or coconut oil to fry the shrimps. I will recommend coconut oil in this recipe.

How to make coconut shrimp?

  • Pat dry the shrimps with a kitchen towel or kitchen paper.
  • Take a small or medium sized mixing bowl and add all-purpose flour, salt and black pepper powder and mix.
  • In another mixing bowl, add eggs and beat them.
  • In the third mixing bowl, add coconut flour and breadcrumbs and mix them.
  • To begin making crispy coconut shrimp, hold the shrimp tail and roll or dredge the shrimp in flour in the first bowl. Shake off any access flour.
  • Next, dip it in beaten egg such that it is fully coated with beaten egg. Shake off any excess.

steps to make fried coconut shrimps

  • After dipping in beaten egg, roll it in coconut mixture such that it is fully covered with coconut mixture.
  • Keep it aside on a plate and do the same for remaining shrimps.
  • Heat a frying pan and spread oil.
  • After oil is heated, place the coconut coated shrimp in the frying pan and shallow fry it. After 4 minutes, flip it to other side and fry for 3 more minutes or until golden brown.
  • Drain the coconut shrimps on plates lined with paper towels.
  • You can serve this easy coconut shrimp appetizer with spicy dipping sauce and lemon wedges.

Notes to keep in mind while making crispy shrimps in coconut flour:

  • If you will make this recipe for party, you can freeze the coconut coated shrimp and fry it just before the party.
  • You can even butterfly the shrimps

Ingredients

  • 15 shrimps shelled and deveined with tail intact
  • ½ cup all-purpose flour
  • 3/4th cup tbreadcrumbs
  • 1 cup coconut flour unsweetened
  • ½ teaspoon salt
  • 1 teaspoon black pepper powder
  • 2 eggs
  • 5 tablespoon vegetable oil or as needed
