Carrot celery soup is a hearty and comforting vegetable soup, low in calories, made in one pot and ready under 30 minutes. This light and healthy carrot soup is delicious, vegan, easy dinner recipe and enough to keep you warm and cozy in the winter season.

Carrot and celery soup is very easy to make. The soup base is made with onion, carrot and celery which are boiled in vegetable stock or water and seasoned with oregano, pepper and salt. The soup is then boiled and is ready in 15-20 minutes.

Let us see the ingredients used to make carrot soup with celery:

  • Celery: Use fresh light green celery to make this healthy winter soup.
  • Carrot: Use firm fresh carrot in this soup recipe. You may use any variety of carrots.
  • Onion: I have used red onion in this recipe to make the soup base. You may use any type of onion.
  • Ginger: Use fresh ginger in this recipe. It is very good for boosting immunity too. Just wash nicely, peel and add it to the soup.
  • Garlic: I have added few garlic cloves which adds a delicious flavour to the celery and carrot recipe.
  • Seasoning: I have seasoned the soup with oregano, pepper and salt. You may add a dash of lemon before serving. You may also try experimenting with cumin and coriander powder for extra flavour.
  • Oil: Olive oil is used in this recipe. You may use any type of cooking oil.

How to make carrot and celery soup

  • Heat a pot and add oil.
  • After oil gets heated, add chopped onion and sautรฉ till onion turns pinkish.
  • Add chopped garlic and chopped ginger and sautรฉ till garlic turns aromatic.
  • Next step is to add chopped carrots and celery and sautรฉ for 5 minutes till the vegetables turn tender.
  • Pour in vegetable stock or water.

  • Simmer on medium heat for 15-20 minutes.
  • Garnish with celery greens and turn off the heat.

  • 5 medium carrots peeled and chopped
  • 3 celery stems chopped
  • 1 medium onion chopped
  • 5 garlic cloves finely chopped
  • 1/2 inch ginger peeled and finely chopped
