Apple kheer or Seb Ki kheer is a delicious Indian milk based dessert made with apples and dry fruits. This Indian milk pudding with fruit is a delicious and nutritious recipe specially made for festivals like Diwali and Holi.

What is kheer?

Kheer also known as payasam or payasa is a traditional Indian dessert made by boiling milk, sugar and a main ingredient like rice, vermicelli, semolina or fruits and certain vegetables like carrot, bottle gourd(lauki), etc and flavoured with cardamom. Optionally dry fruits like dates, almonds, pistachios and cashew nuts are also added.

Ingredients to make apple ki kheer:

  • Milk: Milk and condensed milk are used to make this delicious apple payasam.
  • Apples: Use honey crisp or Fuji or royal gala or any Indian apples to make this apple dessert. Do not use granny smith apples as they have tart and sour flavour and watery texture.
  • Sugar: Sugar is added to this kheer with apple recipe. Quantity can be adjusted as per thickness.
  • Ghee: Desi ghee or clarified butter is used to stir fry apples before adding it to the rabdi. This removed the extra moisture from the apples and prevents them from getting oxidized.
  • Dry fruits: Dry fruits like almonds and pistachios are used in this recipe. Cashew nuts and raisins can also be added.
  • Cardamom pods and saffron strands: The kheer is flavoured with cardamom and saffron flavour.

How to make apple kheer?

  • First, we must grate the apples and stir fry in ghee till all water gets absorbed. This must cool down completely.
  • Next step is to make rabdi. For this, heat milk in a pan, add sugar and keep stirring occasionally till milk quantity gets reduced to 3/4th and then add condensed milk and stir well.
  • Add chopped dry fruits, crushed cardamom pods and soaked saffron strands and mix well.
  • Let this rabdi cool down completely.
  • After cooling down completely, add stir fried apples and mix well.
  • Refrigerate and serve chilled.

Indian Apple Pudding

Tips to make apple payasam:

  • Add stir fried apple to milk only after the prepared rabdi completely cools down. If you add apples to hot milk, the milk will curdle due to the water content from the apples.
  • You can keep the rabdi under the fan to cool down quickly.
  • Soon after grating apples, stir fry them and don’t keep them grated or cut for too long as it will start oxidizing.
  • You may peel the apples and then grate as it might have wax layer.
  • Adjust condensed milk quantity as per sweetness.
  • If you want slightly thinner kheer, just increase the amount of milk.

Can apple kheer be made without sugar?

You can make apple kheer without sugar, by replacing apple with jaggery. Also, if the apples are naturally sweet, you may add less sugar.

Can we make apple kheer for baby?

Yes, we can make this fruit kheer for babies too. Instead of adding chopped dry fruits, you can add dry fruit powder. Also, I recommend peeling apples before making this kheer as apple peels might carry wax. Also, instead of adding condensed milk, just prepare this dish with reduced milk.

Apple Kheer

Ingredients

  • 3 cups milk
  • 2 honey crisp apples cored and grated without peeling
  • ¼ cup condensed milk
  • 6 tablespoon sugar
  • 1 tablespoon desi ghee / clarified butter
  • 15 almonds chopped
  • 10 pistachios chopped
  • 8 cardamom pods peeled and crushed
  • 2 tablespoon milk warm
  • Few saffron strands kesar

Instructions

  • Soak saffron strands in 2 tablespoon warm milk
  • Heat a kadai and add ghee. After ghee gets heated, add grated apple and stir fry till the water from apple gets absorbed. Switch off the gas and let this cool down.

To make the rabdi:

  • In another deep bottomed pan, heat milk. When the milk gets heated, add sugar and stir. Keep on heating the milk on low to medium flame till milk gets reduced to ¾ th. Keep stirring in between.
  • Add condensed milk and stir well. Continue heating the milk.
  • Switch off the gas.
  • Add the soaked saffron strands along with milk, crushed cardamom chopped almonds and pistachios and mix well.
  • Switch off the gas and let this rabdi cool down completely.
  • After the rabdi cools down, add the stir-fried apples and mix well.
  • Keep this in the fridge.
  • Serve chilled.
