Broccoli Bell Pepper Fried Rice

Broccoli bell pepper fried rice is a quick way to make left over rice into a delicious recipe. Loaded with colourful bell peppers and broccoli, this healthy broccoli capsicum pulao can be made for lunch for dinner.

Broccoli bell pepper stir fried rice is a quick and easy recipe which can be made for lunch or dinner. This recipe is like classic take out style Chinese fried rice. Made with frozen peas, the fried rice with broccoli and capsicum turns nutritious and delicious.

Other vegetables and ingredients that can be used in this recipe:

This stir fry rice with broccoli and bell pepper can be with fresh rice or left-over rice. Other vegetables like carrot, French beans, sweet corn, baby corn, mushroom and spring onion can be added. You can even add meat and eggs to make non-vegetarian fried rice with broccoli.

Ingredients to make broccoli bell pepper stir fry rice:

Long grain rice: Long grain rice like Basmati rice is used in this recipe. It can also be made with regular rice. But with Basmati rice its all about flavour and aroma and this makes the Asian rice dishes stand apart.

  • Vegetables: Vegetables like onion, yellow bell pepper, red bell pepper, green capsicum, broccoli and green peas are added to this stir-fried rice. You can go overboard and add more vegetables like carrots, French beans, mushroom, sweet corn, baby corn, spring onion.
  • Garlic: Garlic brings out the flavour. I have added minced garlic in this recipe.
  • Spice powders: Black pepper powder and garlic powder is used to enhance the taste in this fried rice with vegetables recipe.
  • Sauces: Different sauces like tomato sauce, soy sauce and green chili sauce is used in this Asian vegetable fried rice recipe.

Steps to make rice with bell pepper and broccoli

How to make vegetable fried rice with broccoli and bell pepper?

  • Cook basmati rice aldente and keep aside.
  • Boil broccoli florets and green peas together. Drain water and keep aside.
  • Heat a kadai or wok. Add oil and after it gets heated add minced garlic. Do not burn garlic.
  • After raw smell or garlic goes away, add onion and sautรฉ till onion turns pinkish.
  • Add diced red, green, yellow bell pepper, boiled broccoli and green peas and sautรฉ till it gets cooked.
  • Mix black pepper powder and garlic powder and mix well.
  • Add all sauces and salt and mix well.
  • Finally add cooked rice and mix gently.
  • Serve hot.

Yes, this fried rice can be reheated either in microwave or on a skillet with little oil.

Ingredients

  • 2 cups Basmati rice
  • 2 medium sized onion finely chopped
  • 1 cup broccoli florets
  • ยฝ cup green bell pepper capsicum, diced
  • ยฝ cup yellow bell pepper diced
  • 1 cup red bell pepper dices
  • ยฝ cup green peas
  • 5 pods garlic minced
  • 1 teaspoon black pepper powder
  • 1 tablespoon garlic powder
  • 2 tablespoon tomato sauce
  • 1 tablespoon green chili sauce
  • 2 teaspoon soy sauce
  • 2 tablespoon oil
  • To taste salt
