Mango Shrikhand made from spoilt milk is a delicious recipe made from spoilt milk. This mango shrikhand is also called as amrakhand. The twist to this recipe is that I made it from spoilt milk or “phata hua doodh”. What do you do with milk that goes spoilt while boiling? Discard? No. Don’t do that. You can make paneer from spoilt milk. Similarly you can make lots of dishes with paneer that you get from spoilt milk.
My daughter loves mango shrikhand. We usually get it from the store. Sometimes I also make it without using spoilt milk. Refer to this mango amrakhand recipe which is made from hung curd. Today I will show you how to reuse spoilt milk to make delicious recipes.
Since it is summer season, there are chances of milk going bad. Also mangoes are in season. So why not make the best use of season? The other day, 2 packets of milk went bad. My mom in law did plain shrikhand with the milk which went bad from the 2 packets. Within another week, 6 packets of milk went bad. I decided to make mango shrikhand as my kiddo loves it.
How to know if milk is gone bad?
When you boil milk, sometimes the milk goes bad and whey separates from milk while boiling. You will see water separating from milk solids(chena or paneer). This is the time you should know that milk is spoilt. Many people discard it. No don’t discard it. It is still suitable for consumption. You can make paneer from spoilt milk by following this recipe. Or else you can make shrikhand as shown in today’s recipe.
After the milk goes bad, let it cool down. Then take a muslin cloth and collect the milk solids. Let the whey get drained. Tie the muslin cloth for 6 to 8 hours with milk solids to some place in your kitchen. When all the whey gets drained, collect the milk solids or paneer in a bowl. Using a hand blender, blend nicely till the milk solids become smooth and creamy. Don’t overdo.
In a small bowl, add few saffron strands to warm milk. Next step is adding the mango pulp in the bowl and blending it with the cream. Then add powdered sugar and blend or mix. Add crushed cardamom and mix well. Last step is to add the saffron strands and milk to the shrikhand. Remember to mix well.
