North Indian Style Baingan Ka Bharta

One evening for dinner I did not have anything in my fridge other then one big fat brinjal. For a change I tried the North Indian Style Bainga Ka Bharta. My hubby does not like the North Indian style bharta. We still love the Goan style bharta which is more healthier then this. Still cooking style and recipes vary from region to region. North Indians prefer their style of bharta. Many people ask me the recipe to north Indian style baingan bharta. So today I thought I should post this. Bharta in any form is always healthy as it contains brinjal which has iron.

Ingredients:
1 big brinjal
2 tablespoon mustard oil
1 onion
1 tomato
1 teaspoon jeera/cuminย seeds
1 teaspoon ginger paste
2 chopped green chilles
corriander leaves for garnish
1 onion finely chopped
1 tomato finely chopped
Grated coconut ( optional)

Procedure:
Roast the brinjal.
Peel it and mash it.
In a kadai, add the mustard oil and let it get heated till smoking point. Then let it cool down and reheat it.
Then add the jeera seeds and let it fry for 20 seconds. Add the ginger paste and green chillies and let it fry for sometime.
Then add onions and when they turn mushy add tomatoes. Mix well and let it get fried for 10 minutes.
Now add the mashed brinjal. Adjust salt and garnish with corriander leaves and grated coconut (optional).
