Mixed Veg Spaghetti Pasta

Mixed Veg Spaghetti Pasta is a quick, delicious, and healthy pasta recipe without cheese. This veg spaghetti pasta is homemade and can be made under 30 minutes from start to finish. Loaded with vegetables like onion, tomato, bell pepper, baby corn, this vegetarian spaghetti recipe Indian style is a must try pasta recipe.

Simply boil the spaghetti pasta and drain it. Add any type of vegetable like bell pepper or capsicum, tomato, onion, baby corn, asparagus, broccoli, carrots, or mushroom while making the sauce. I have not added cheese to veg spaghetti pasta. If you wish, you can garnish it with grated Parmesan cheese and serve.

Whenever I feel lazy to cook dinner or if I am tired specially after returning home from office, I make this quick veg spaghetti. It is simple and is packed with nutrition. You can also pack it in your lunch box and carry it to office as it stays fresh for 4 to 5 hours.

What Ingredients goes in making pasta with mixed vegetables?

  • Pasta: I have used ยฝ packet Del Monte spaghetti pasta. You can use pasta of any brand in this vegetable pasta recipe.
  • Vegetables: Various types of vegetables like onion, tomatoes, bell pepper(capsicum) and baby corn are used in this spaghetti recipe veg.
  • Ginger and garlic paste: I have used ginger garlic paste in this recipe. You can also use minced ginger and garlic.
  • Oil: I have used olive oil in this recipe. You can also use sunflower oil if olive oil is not available.
  • Sauce: Green chili sauce and tomato sauce are used to make this Indian style pasta with vegetables.
  • Seasonings: Red chili flakes are added for heat. Italian seasoning is added for enhancing the pasta taste.

How to make vegetable spaghetti?

Let us see how to make veg spaghetti pasta:

  • Boil water in a saucepan. Add 1 teaspoon oil and ยฝ teaspoon salt. Add pasta and boil it al-dente.
    Drain and keep cooked spaghetti pasta aside.
  • In the same saucepan, heat olive oil and add onion.
  • Fry onion till it turns pinkish. Add tomato and sautรฉ till it turns mushy.
  • Now add (bell pepper) capsicum juliennes and baby corn and sautรฉ for 10 minutes.
  • Add ginger garlic paste and stir.
  • Add tomato sauce and chili sauce and mix well.
  • Add cooked spaghetti pasta and mix everything together.
  • Add the red chili flakes and Italian seasoning. Add salt to taste and mix well.
  • Garnish with additional Italian seasoning and serve hot.

Ingredients

  • ยฝ packet Del Monte Spaghetti pasta
  • 1 medium sized onion finely chopped
  • 2 medium sized tomatoes finely chopped
  • 1 capsicum (bell pepper) julienned
  • 5 baby corn finely sliced
  • 1 tablespoon ginger garlic paste
  • 4 tablespoon olive oil
  • 2 tablespoon green chili sauce
  • 2 tablespoon tomato sauce
  • 2 tablespoon red chili flakes
  • 4 tablespoon Italian seasoning
  • To taste salt
