Sweet Coconut Rice

Indian Sweet coconut rice is a no onion no garlic rice recipe made with coconut milk, sugar, spices, desi ghee and dry fruits.

Sweet Coconut Rice is a traditional Goan dish that is prepared in the GSB community. Unlike South Indian Coconut Rice, Goan coconut rice is sweet and is flavoured with cardamom and cloves. This recipe is also know as Narali bhaat.

We prepare this rice with coconut milkย  during Narali porrnima and on other religious occasions. Another version of sweet rice is sakhar bhaat or sugar rice. Recipe coming soon.

If you want to surprise your guests with something different, then make this easy coconut rice. It can be served as a dessert too. It can also be served as prasadam for poojas.

What is coconut rice?

This is a no onion no garlic rice recipe. The flavours of cardamom, coconut milk, basmati rice, ghee and sweetness of sugar jell well. This is a healthy recipe. Since it is sweet and loaded with calories, one cannot eat it in large quantity. You can alter sugar quantity as per your taste. Diabetic people can useย sugar-free alternatives.

Ingredients to make no onion no garlic coconut rice:

  • Rice: Any type pf rice can be used to make this recipe. I have used basmati rice. You can even use brown rice and make the recipe healthier.
  • Coconut milk: The star ingredient which brings out the flavour in the recipe. If you donโ€™t have coconut milk, then refer to recipe notes to get steps to extract coconut milk from freshly grated coconut.
  • Sugar: Sugar adds the right amount of sweetness to the recipe.
  • Spices: Cloves and cardamom are added for flavour and aroma.
  • Dry fruits: Raisins and cashewnuts are used in this recipe.
  • Ghee: Desi ghee or clarified butter is used for roasting dry fruits and for stir frying rice before cooking.

How to make easy coconut rice?

I have made rice on stove top.

  • Wash and soak the rice for 1 hour in enough water. After 1 hour, drain the water.
  • In a kadai/deep bottomed utensil, heat ghee and then add cloves and rice. Stir-fry the rice in ghee for 5 minutes.
  • Boil 1 cup water and add it to kadai in which rice is being stir fried. Let the rice get par boiled.
  • After all the water is absorbed by rice, add coconut milk and dry fruits.
  • Let rice get cooked in coconut milk. After the coconut milk gets absorbed, add sugar, cardamom powder. Adjust salt.

What to serve with coconut rice?

You can serve rava fried potato or rava fried banana with sweet rice made in coconut milk. You can also serve subzi like bottle gourd subzi or no onion no garlic potato, green peas and carrot stir fry.

Sweet coconut rice is a no onion no garlic rice recipe made with coconut milk, sugar, spices,desi ghee and dry fruits.

Ingredients

  • 1 cup Basmati rice
  • 1 cup thick coconut milk Or extracted from 1/2 cup grated coconut
  • 4 tablespoon sugar
  • 10 cloves
  • 1 tablespoon + 1 teaspoon desi ghee/clarified butter
  • ยฝ teaspoon cardamom powder
  • 20 crushed cashewnuts
  • 20 raisins
  • ยผ teaspoon salt or as per taste

Instructions

  • In a kadai, add 1 teaspoon ghee and add raisins. After they get puffed, remove them and keep them aside. In the same kadai roast cashewnuts.
  • Wash and soak the rice for 1 hour in enough water. After 1 hour, drain the water.
  • In a kadai, heat ghee and add cloves and rice. Stir-fry rice in ghee for 5 minutes.
  • Boil 1 cup water and add it to kadai in which rice is being stir fried. Let rice get par boiled.
  • After all the water is absorbed by rice, add coconut milk and dry fruits.
  • Let the rice get cooked in coconut milk. After the coconut milk gets absorbed, add sugar and cardamom powder.
    Adjust salt.

Notes

For extracting coconut milk, take 1 cup freshly grated coconut and grind it by adding ยฝ cup water.ย  Pass this through a strainer and retain the coconut milk.
