Goan Pumpkin Subzi | Dudyachi Bhaji

Pumpkin Subzi Goan style also known as dudyachi bhaji is a zero oil, under 20 minutes easy and healthy recipe made with red or yellow pumpkin.

Goan Pumpkin Subzi a delicious and healthy dish that we make in Goa specially on the vegetarian days. This is a zero-oil pumpkin sabzi. It can be made with yellow or red pumpkin. Everyone loves this dish specially the kids because of the sweet taste of pumpkin.

Dudyachi Bhaji

We GSBโ€™s do not eat fish on certain days like Monday, Thursday and Saturday and dedicate them to certain Gods. During these special days we prepare variety of vegetarian dishes. Subzis, dals of different types and sides like rava fried vegetables or pakoras and salads.

Can this pumpkin bhaji be made without onion and garlic?

Yes! This dudyachi bhaji can be made without onion and garlic too. Just avoid onion in todayโ€™s recipe and proceed with cooking. The taste will still be great This can be served as a fasting recipe too.

How to serve pumpkin sabzi?

Pumpkin sabzi with poori tastes delicious. You can also serve it with steamed rice, vodyacho ross or tomato saar, rava fried onion and salad. This can also be packed in the lunch box. Off course it can be served for lunch or dinner too.

Health benefits of pumpkins:

Pumpkins are a super food. Since they are rich in vitamin A, they boost the eye health. They also lower the blood pressure and protect the heart.

Ingredients to make Indian Kaddu ki subzi:

  1. Pumpkin: Red or yellow pumpkin can be used in this recipe. Disco pumpkin can also be used. However, the recipe tastes best when cooked with local red pumpkin.
  2. Onion: Finely chopped onion is used in this recipe. If you prefer to cook no onion no garlic recipe, just avoid onion.
  3. Spice powders: Red chili powder (paprika) and turmeric powder are used. Red chili powder provides the needed spice and turmeric powder enhances the color and taste of the recipe.
  4. Coconut: Freshly grated coconut is used in this pumpkin recipe. You can try using grated desiccated coconut if fresh coconut is not available.

Cooking pumpkin subzi is very easy:

  1. Heat a kadai/wok, add all the ingredients one by one. That is add peeled and chopped pumpkin, finely chopped onion spice powders, grated coconut, little salt and water.
  2. Mix well and let it simmer with lid closed.
  3. All water in kadai should get absorbed and the pumpkin should turn soft.
  4. If the pumpkin is still hard, add more water and simmer. Remember not to add too much water as pumpkin will turn mushy. I will suggest adding water little at a time and cooking with lid covered.
  5. Adjust salt to taste.

Ingredients

  • 2 cups pumpkin peeled and chopped into cubes
  • 1 medium sized onion finely chopped
  • 1 teaspoon red chili powder
  • 1 teaspoon turmeric powder
  • 4 tablespoon coconut freshly grated
  • ยพ cup water
  • To taste salt

Instructions

  • Heat a kadai/wok, add all the ingredients one by one. That is add peeled and chopped pumpkin, finely chopped onion spice powders, grated coconut, little salt and water.
  • Mix well and let it simmer with lid closed.
  • All water in kadai should get absorbed and the pumpkin should turn soft.
    If the pumpkin is still hard, add more water ands immer. Remember not to add too much water as pumpkin will turn mushy.
