Sprouted Green Gram And Cherry Tomato Stir Fry

Sprouted green gram and cherry tomato stir fry is a healthy and nutritious recipe. You can make this sprouts recipe in just 15 to 20 minutes. Green gram or mung beans sprouts are stir fried with fresh cherry tomatoes. Serve this sprouted moong recipe for breakfast or for any meal as a side dish.

Ingredients that go in making healthy moong sprouts and cherry tomato stir fry:

  • Green grams: Green gram or moong sprouts are used in this healthy sprouts stir fry recipe.
  • Vegetables: Vegetables like onion and fresh cherry tomatoes are used in making this delicious sprout recipe.
  • Spices: Red chili powder and turmeric powder are the 2 basic spice powders used in this recipe. We have also used curry leaves in this recipe. The stir fry can also be cooked if curry leaves are not available.
  • Lime juice: Juice of 1 lime is added in this recipe.
  • Oil: I have used rice bran oil in this recipe, you can use any type of cooking oil in these sprouts stir fry recipe.

How to make sprouted green moong stir fry with cherry tomatoes:

  • Heat a kadai/wok and oil. When the oil gets heated add curry leaves and fry for 1/2 minute.
  • Add the chopped onion and sautรฉ till the onion turns pinkish.
  • Add chopped cherry tomatoes and fry for 5 minutes.
  • Mix the sprouted green gram or moong sprouts and stir and fry for 5 minutes only. Here, I am not frying the sprouts for too long, as frying sprouts too long loses its nutritional value. I am frying it for just 5 minutes on low flame by keeping the lid covered.
  • Next step is to add the chilli powder and turmeric powder and mix well.
  • Add lemon juice, salt to taste and mix well.
  • Garnish with chopped coriander leaves.

Notes to keep in mind while making the sprouted stir fry:

  • Do not fry the sprouts for too long as they lose the nutritional value. Just fry it for 5 minutes on low flame.
  • Make the same recipe with any type of sprouts.

Sprouted green gram benefits:

Sprouts as you all know are wonder foods. They are excellent source of protein and calcium. They help to develop immunity against certain diseases, are excellent for weight loss and promote healthy hair. There are numerous health benefits of sprouts.

How to sprout moong beans or green gram?

  • Soak the green grams overnight in 3 cups water.
  • Next morning(day1) drain the water completely and store the green grams in an airtight container. Let them be like that on day 1 night.
  • On Day2 morning you will see small sprouts from the moong.
  • If you want larger sprouts, store them in the same airtight container for another night(day 2 night).
  • On Day 3 morning, you will see nice and large sprouts.
  • You can either store them in the fridge for 2 more days or you can start using them in your recipes.

I have also used Fortune rice bran oil in this healthy sproutsโ€™ recipe. Fortune Rice Bran Health Oil is extremely good for heart and in some countries it is known as โ€œHeart Oilโ€. It has a key micronutrient called โ€œOryzanolโ€ which is an antioxidant which is found in the bran of rice. That is the reason why this oil is dark as it is refined to keep all the micronutrients intact. Also, usage of this oil in cooking does not alter the taste of food and is very good for all age groups as it is good for heart, immunity, skin and hormones.

Apart from being good for the immune system and heart, it also helps to have better skin. Ingredients

  • 3/4 cup green grams
  • 2 medium sized onions finely chopped
  • 7-8 yellow cherry tomatoes cut into halves
  • 4-5 curry leaves
  • 2 teaspoon red chili powder
  • 1 teaspoon turmeric powder
  • 1 tablespoon lemon juice
  • 4 tablespoon Fortune Rice Bran Oil
  • To taste salt
