Broccoli Soup

On some days of the week I get too tired. I prefer not to cook anything for dinner. My little one gets done with rice and dal which I prepare in the mornings. Since my hubby does not eat rice at night, sometimes I make just chapatis and ask him to eat with halwa or jam. I just take my kid go off to bed. No, I get so damn tired that I don’t even feel hungry!

This week during the grocery shopping, my hubby Dear came home with loads of Broccoli. It’s green and we believe that whatever is green is good for health. And I need not mention the numerous health benefits that broccoli has to offer. Hubby was insisting me to cook something healthy with Broccoli. I just came up with a thick and hot Broccoli soup, perfect for the wintery nights.It was tasty, healthy and filling too.

Ingredients:
3 cups chopped broccoli
2 medium sized chopped onions
1 tablespoon garlic paste
10-15 black peppercorns
1 tablespoon oil oil

Procedure:
Cut the broccoli into pieces and boil them in water.
Keep the boiled broccoli aside, retain the water.

In a kadai / wok, add 1 tablespoon olive oil and fry the onions. Once it turns pinkish add garlic paste and stir.
Add the boiled broccoli to this along with the some water which was used for boiling.
Add 4-5 black peppercorns to this mixture. Then switch off the gas.
Once it cools, blend this using a hand blender. You can even blend this using a mixie.
You can add more water if you need a thinner soup.
Add salt to taste.
Garnish with powder made out of black peppercorns. You can increase the spice content according to your taste.
