Prawns Fried Rice

Prawns Fried Rice is what is an expertise of my Mom. She makes the best Prawns Fried Rice in the world. I tried to learn it from her, but yes I can’t still master that.ย I have a similar yet a different version which still turns great. My friend Akshada, always tells me to put up the recipe of Prawns Fried Rice, specially which my Mom prepares. One fine day I will ask my Mom to do a guest post in my blog with her unique yet delicious Prawns Fried Rice specially for my Dear Friend.

When I was doing my PG in Belgaum, my Mom would send this fried rice and my friends used to go ga ga over it. The taste is what everyone still remembers even though after years and we are miles apart. This is what resembles a great cook, that a person will remember you for ages from what you cooked ๐Ÿ™‚

The recipe shared here turned absolutely delicious and if one follows it well, they will really win the heart of the person who eats this. I always win my hubby’s heart by my cooking skills. The saying goes true “The way to your husband’s heart is through his stomach”. I getย umpteenย satisfaction and happiness when he just nods his head while eating the food I cook indicating that he liked the food. He also keeps saying “mm mm,mm mm” while eating which shows that he is enjoying and also he wants me to feel happy that he liked it. I always tell him to pass some comments. Then he says he does not have time. The food cooked turned so delicious that he doesn’t want to waste time by talking and commenting ๐Ÿ™‚
… and I feel great that I made him happy and that he loved what I cooked for him with love ๐Ÿ™‚

 

Ingredients:ย  ย  ย  ย  ย  ย  ย  ย  ย  ย  ย  ย  ย  ย  ย  ย  ย  ย  ย  ย  ย Prep. Time: 40 Mins, Serves: 4
1 Cup Basmati Rice
2 Bay Leaves
2 Medium sized onions
5 Garlic pods
1/2 inch ginger
1 teaspoon soy sauce
1 teaspoon chili sauce
1/2 medium sized carrot
1/2 capsicum
1/2 non-veg Maggi cube(optional)
1 teaspoon tomato sauce
8-10 marinated prawns
1 tablespoon butter
2 tablespoon oil for frying
2 cloves
4-5 peppercorns
1/2 teaspoon cinnamon powder
1/2 teaspoon pepper powder
1 tablespoon chopped coriander leaves for garnishing

For Marinating the prawns:
1/2 teaspoon chili powder
1/2 teaspoon turmeric powder
1/4 teaspoon salt

Procedure:

Marinate the prawns by applying chilly powder, turmeric powder and salt and keep aside for 30 Mins.
Scrape the outer skin of the carrot and cut it into fine long slices
Chop the capsicum into thin long slices.

Par boil the basmati rice by adding bay leaves, peppercorns, cloves and a pinch of salt.
Also add 1 tsp oil to the boiling rice so that they don’t become sticky.
After the rice gets par-boiled, spread it on a colander/big strainer so the water drains out and let it dry for 30 Mins.
Spread the cinnamon and pepper powder on it.

In a kadai/wok, add oil and fryย onions and let them turn pinkish.
Then add the paste made out of garlic and ginger. Let it get fried for sometime.
Add the veggies and fry for sometime.

Cut the prawns into 2-3 pieces and add it to the kadai and fry.
After 8 Mins, add the sauces and the Maggi cube and fry for 1 min.
Add salt and mix well.

Once this is done add the cooked basmati rice and mix well ensuring that the rice grains does not break.
Add butter and mix properly.
Switch off the gas and garnish with chopped coriander leaves.

Serve it with starter of your choice or with salad/raita.

Note: Finely chopped cabbage can be added while frying the veggies.
