Celebrations with Eggless Chocolate Muffins

1 lakh hitโ€™s. This is a very very important milestone for my little blog. Itโ€™s been 1 year, 4 months and 14 days. My special thanks to everyone, my followers, FB fans and all email subscribers. I want to thank you all on a personal note. I want to share these yummy eggless chocolate muffins with you all.
I baked these awesome eggless chocolate muffins and took to my office. My colleagues just loved them.  Everyone wants them in office every other weekend. Ever since I shared it with them and shared some pics on FB, recipe requests are flowing in from all directions. I told them to wait. I knew that this important milestone of having1 lakh hits was very close and I wanted to post these eggless muffins recipe.

 

Eggless Chocolate Muffins

Ingredients:
3/4 cup  All purpose flour
2 and1/2 tbsp  Coco powder
1/2 cup  Sugar
1/2 tsp  Baking powder
1/4 tsp  Salt
1/4 cup  Oil
1/2 cup  Cold water
1 tsp  Vanilla essence
1 tsp  Lemon juice

1 cup chopped dry fruits ( a combination of cashew nuts, almonds and pista)
1/2 cup chopped chocolate
Eggless Chocolate Muffins
Procedure:
Sieve the flour, baking powder and coco together. Mix in salt and sugar.
In a separate bowl mix oil, water and vanilla essence.
Mix in powdered sugar and keep on stirring till sugar gets dissolved.
Add this to the flour mixture and stir well to ensure that there are no lumps.
Add in the chocolate pieces and nuts and stir well.
  
Now pre-heat the microwave to 180C for 2 minutes.
Line the muffin tray with muffin liners.
Just before baking add lemon juice to the batter and again mix well.
Now add 3/4 th the muffin liner.
Perfectly baked muffins
Bake for 15-18 minutes or until a toothpick or skewer inserted comes out clean. Cool them on a wired rack.
I first tried baking for 25 minutes and my muffins were a bit hard. Then I decreased the time and found that 15-18 minutes was the perfect time which my muffins chose to get baked uniformly and perfectly.
This recipe yields 18 muffins.
The muffins tasted great on the next day and the flavours mixed well.
