Wheat Flour Cup Cakes With Nuts

Ever since the chocolate cup-cakes baked by me became a hit in my home and office, I have started baking much more and experimenting with different things. Today I used wheat flour to bake the cup-cakes. A very good friend of mine keeps asking for the cup-cakes. This time I thought I’ll try a different experiment i.e. to bake cup cakes with wheat flour. ย Yes the experiment did turn successful. The wheat flour cup cakes turned delicious.

When my little one saw the cakes being set on the wired rack, she just came running and took away 2 of them. My hubby loved the cup-cakes. In the first batch of cup-cakes I forgot to add nuts, my hubby told me to add some nuts to improve the flavour and to reduce the sugar in the batter next time.ย I took all the comments positively. That is what helps me to become a better cook and to cook better things every time.




Ingredients:

3 Eggs
1 tablespoon – Baking Powder
1 & 1/2 cups – Powdered White Sugar
2 cubes – Butter
1 tablespoon – Vanilla Extract
1 cup – Milk
2 cups – Wheat Flour
1/2 cup – Corn-flour
1/2 tablespoon – Salt
Handful of chopped nuts like almonds & cashews

Yeilds : 24 muffins

Procedure:

Pre-heat the microwave in convection mode to 180C for 2 minutes.
In a mixing bowl, add eggs one by one. Beat them well. Add vanilla extract and beat again.
Now add sugar and mix well ensuring that no lumps are formed.
Add butter, corn flour, salt, baking powder, milk and mix well.
Add the chopped nuts and mix.
Now add wheat flour and mix well so that no lumps are formed.
Use a hand blender to ensure uniform mixing.
Now pour the batter in the muffin / cup-cake tray upto 3/4 of the tray.
Bake the cup-cakes in the pre-heated microwave for 20 mins.
Check if they are done by inserting a tooth-pick. If the tooth-pick comes out clean then the cup-cakes are done.
Let them cool on the wired rack.
