Aloo Gajar Matar Ki Subzi

Aloo Gajar Matar ki Subzi is a no onion no garlic stir fry made with potato, carrot and green peas. This is a mildly spiced recipe and is very easy to prepare. This is an under 20 minute recipe. Aloo gajar matar sabzi without onion and without garlic is a stir fry made with potato, carrot and green peas. This dry curry with carrot is a nutritious, vegan and quick recipe. This carrot potato sabzi turns delicious and can be eaten on fasting days too. During the holy month of Shravan and during Navratri many people try pure veg no onion no garlic dishes.

Aloo,Gajar And Matar Ki Subzi

This mix vegetable stir fry is highly nutritious as carrots contain vitamin A, potatoes are rich in vitamin B6, vitamin C and fiber. They promote heart health by reducing the total cholesterol in blood due to its high fiber content. Green peas are also rich in vitamin K, vitamin B1 and number of nutrients. They are an excellent source of folic acid too. You can try matar paneer recipe with green peas.

Aloo gajar matar ki sabzi is a simple and delicious stir fry. It is a no onion and no garlic recipe too. Serve it with rotis .You can even pack this dry subzi in the lunch box. If you are looking for a gajar matar sabzi without potato, then do try this no onion no garlic carrot peas stir fry recipe.

Ingredients to make aloo, gajar, matar ki subzi:

  • Vegetables: Potato, carrot and green peas are the 3 basic vegetables used to make this nutritious stir fry.
  • Seasoning: For seasoning, we used mustard seeds, cumin seeds, curry leaves and green chilies.
  • Spice powders: Turmeric powder and asafoetida are the spice powders used in this recipe.

How to make no onion no garlic potato, carrot and green peas stir fry?

Let us prepare the aloo gajar and mater ki subzi:

  1. Heat a kadai/wok. Add oil. When oil gets heated add mustard seeds.
  2. After mustard seeds flutter, add cumin seeds.
  3. After cumin seeds flutter, add asafoetida and mix.
  4. Add curry leaves and fry for 2 minutes.
  5. Add the slit green chili.
  6. Now add the cubed potatoes, cubed carrots and green peas.
  7. Add 1 cup water and simmer on low flame with closed lid till carrots and potatoes get boiled. This would take around 10-15 minutes.
  8. Open the lid and add turmeric powder and red chili powder and mix well.
  9. Add salt to taste.
  10. Garnish with chopped coriander leaves.

Other variations:

When you are not fasting, you can add onion and tomatoes to this subzi and enhance its taste. You can even make this subzi, mash it and use it as stuffing in paratha. This can be done with some leftover aloo subzi too.

Ingredients

  • 2 medium sized potatoes peeled and cubed
  • 1 medium sized carrot peeled and cubed
  • 1/2 cup green peas
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 sprig curry leaves
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1/4 teaspoon asafoetida
  • 1 green chili slit
  • To taste salt
  • 2 teaspoon oil
  • Few coriander leaves for garnish

Instructions

Let us prepare the aloo gajar and mater ki subzi:
