15 Minute Cauliflower Fried Rice

15 Minute Cauliflower Fried Rice is a low-carb healthy recipe made with grated or shredded cauliflower in under 15 minutes.

Todayโ€™s recipe is cauliflower fried rice which can be cooked within 15 minutes. Well there is no โ€œrealโ€ rice in this recipe. It is just made with grated or shredded cauliflower which resembles rice. The same procedure of making fried rice is followed to make this cauliflower fried rice. Hence the name cauliflower fried rice.

15 Minute cauliflower rice

This is a low-carb and healthy cauliflower recipe which can be prepared in a jiffy and packed in the lunch box too. If you are following a paleo diet, this cauliflower fried rice is the best replacement of the regular fried rice.

Cauliflower is rich in vitamin C and since it contains fibre it is good for digestion. It is loaded with antioxidants and is shown to reduce the risk of cancers.

Ingredients to make cauliflower rice in 15 minutes:

  • Cauliflower: Use fresh, clean cauliflower in this recipe. This is the star ingredient.
  • Vegetables: Onion, capsicum, sweet corn, green peas are few vegetables I have used in this recipe. You can even use carrots and French beans.
  • Garlic: Few pods of garlic are added for flavour.
  • Ginger and garlic paste: Ginger and garlic paste is made by crushing ยผ inch finger and 8 pods garlic using a mortar-pestle. You can even use a store-bought ready ginger-garlic paste.
  • Sauces: Chili sauce and soy sauce are the two sauces used in making this fried rice with cauliflower.
  • Black pepper powder: Black pepper powder adds the right amount of spice in this recipe. Quantity can be altered as per taste.

How to cook cauliflower rice?

  • Chop the cauliflower into florets and add it to water to which 2 tablespoon salt is added. After 30 minutes, drain, wash and keep aside.
  • Pulse this in food processor for 1 minute till it looks like grains. You can even grate this using a grater.
  • Heat a kadai/wok, and add 3 tablespoon oil.
  • Add sliced garlic and sautรฉ till the raw smell of garlic goes away.
  • Now add onion and fry till onion turns pinkish.
  • Add capsicum and let it cook for 5 minutes.
  • Add the boiled green peas and boiled sweet corn, mix well.
  • Mix some chopped spring onion greens.
  • Add ginger garlic paste, soy sauce and green chili sauce. Mix well.
  • Finally add shredded cauliflower and mix.
  • Cook for 5 to 7 minutes. The cauliflower should not get soggy.
  • Add black pepper powder and salt to taste and mix.

How to serve fried rice made from cauliflower?

You can make this easy cauliflower rice for parties and surprise your guests too. After returning from office if you are too tired, simply cook this fried rice by adding any types of vegetables and have a healthy and delicious dinner. It is simple and easy to cook too. Just remember to serve hot.

Cauliflower can be grated or shredded using food processor.

Ingredients

  • 1 medium sized cauliflower
  • 1 medium sized onion finely chopped
  • 8 garlic pods finely sliced
  • 1 capsicum julienned
  • ยผ cup sweet corn boiled/steamed
  • ยผ cup boiled green peas
  • 4 tablespoon spring onion greens chopped
  • 1 tablespoon ginger garlic paste
  • 1 teaspoon soy sauce
  • 2 tablespoon green chili sauce
  • 1 teaspoon black pepper powder
  • 3 tablespoon oil
  • To taste Salt

The cauliflower should not get soggy while cooking.
