To check if the oil is ready for deep frying, dip a dry skewer and if it starts sizzling, then the oil is ready. If the oil does not sizzle, then it is not yet ready, and you might want to heat the oil for a little, longer time before deep frying the shrimp.

If oil starts smoking, then it is too hot, and you should lower the heat before frying.
