Avocado Gaucamole

Ingredients

  • 2 avocados ripe
  • ½ onion finely chopped
  • 1 tomato deseeded and finely chopped
  • 1 small jalapeño finely chopped
  • 2 tablespoon fresh cilantro chopped
  • 1-2 tablespoon lemon juice or to taste
  • 1/4 teaspoon salt or to taste
  • 1/4 teaspoon pepper or to taste

Instructions

  • Cut avocados, remove pits, and scoop into a bowl.
  • Mash with a fork (chunky or smooth as you like).
  • Add onion, tomato, jalapeño, cilantro, and lemon juice.
  • Season with salt and pepper. Mix gently.
  • Taste and adjust lemon/salt. Serve fresh!

Notes

Great with veggie sticks, whole grain toast, or in wraps.
