Ingredients

  • 1 bunch broccoli cut into florets
  • 1 teaspoon red chili powder
  • 1 teaspoon turmeric powder
  • ¼ teaspoon salt
  • Oil for frying

For the coating:

  • ½ cup semolina rawa
  • ¼ cup rice flour
  • ½ teaspoon red chili powder
  • ¼ teaspoon salt

Instructions

  • Cut the broccoli into pieces, wash, and soak briefly in water. Drain well.
  • Apply red chili powder, turmeric powder, and salt to the broccoli. Set aside for 5–10 minutes.
  • Mix semolina, rice flour, chili powder, and salt in a separate bowl.
  • Coat each piece of marinated broccoli in the semolina mixture.
  • Heat a frying pan with 1 tablespoon oil. Arrange the coated broccoli in the pan, then drizzle 1–2 more tablespoons of oil on top.
  • After 10 minutes, flip and fry for another 10–15 minutes, until crispy and golden.

Notes

Avoid over-frying beyond what's needed for crispiness, to preserve the broccoli's nutritional value.
Works the same way as rava fried cauliflower, if you'd like to compare the two.
