Malabar Spinach Stir Fry | Vaalchi Bhaji

Malabar Spinach Stir Fry, also known as Vaalchi Bhaji in Goa and Basale Soppu in Karnataka, is an easy zero-oil Indian vegetable recipe made with Malabar spinach, coconut, jaggery and spices.

Ingredients

  • 1 bunch Vaalchi Bhaji / Malabar spinach / Basale leaves
  • 1 medium onion finely chopped
  • 1 tablespoon grated jaggery
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 2 tablespoons freshly grated coconut
  • Salt to taste
  • 1 cup water

Instructions

  • Separate the Malabar spinach leaves and tender portions from the tough stems.
  • Wash the greens thoroughly several times and drain.
  • Chop the Malabar spinach into small pieces.
  • Add the chopped greens, onion, grated coconut and jaggery to a kadai or skillet.
  • Add 1 cup water and place over medium heat.
  • Cover and cook for 10 minutes.
  • Stir well and continue cooking for another 10 minutes.
  • Add turmeric powder and red chili powder and mix.
  • Cover and continue cooking until the excess water is absorbed.
  • Add salt to taste.
  • Mix well and switch off the heat.
  • Serve hot with rice and dal, roti or chapati.
