Malabar Spinach Stir Fry | Vaalchi Bhaji
Malabar Spinach Stir Fry, also known as Vaalchi Bhaji in Goa and Basale Soppu in Karnataka, is an easy zero-oil Indian vegetable recipe made with Malabar spinach, coconut, jaggery and spices.

1 bunch Vaalchi Bhaji / Malabar spinach / Basale leaves 1 medium onion finely chopped 1 tablespoon grated jaggery 1 teaspoon turmeric powder 1 teaspoon red chili powder 2 tablespoons freshly grated coconut Salt to taste 1 cup water
Separate the Malabar spinach leaves and tender portions from the tough stems.
Wash the greens thoroughly several times and drain.
Chop the Malabar spinach into small pieces.
Add the chopped greens, onion, grated coconut and jaggery to a kadai or skillet.
Add 1 cup water and place over medium heat.
Cover and cook for 10 minutes.
Stir well and continue cooking for another 10 minutes.
Add turmeric powder and red chili powder and mix.
Cover and continue cooking until the excess water is absorbed.
Add salt to taste.
Mix well and switch off the heat.
Serve hot with rice and dal, roti or chapati.
