Kantola Sabzi | Teasel Gourd Stir Fry

Kantola Sabzi is an easy no onion no garlic Indian stir fry made with teasel gourd or spiny gourd, tamarind, jaggery, spices and fresh coconut.

Ingredients

  • 5 medium Kantola / teasel gourds / spiny gourds
  • 1 teaspoon mustard seeds
  • 2 dry red chilies
  • 8 –10 curry leaves
  • Pinch of asafoetida
  • 1 tablespoon grated jaggery
  • 1 marble-sized ball tamarind soaked in water and pulp extracted
  • ½ teaspoon turmeric powder
  • 2 teaspoons red chili powder
  • 2 tablespoons freshly grated coconut
  • Salt to taste
  • 1 tablespoon oil
  • ½ cup water

Instructions

  • Wash the Kantola thoroughly and chop into small pieces.
  • Heat oil in a kadai or wok.
  • Add mustard seeds and allow them to splutter.
  • Lower the heat and add asafoetida, curry leaves and dry red chilies.
  • Add chopped Kantola and mix well.
  • Add ½ cup water, cover and simmer.
  • After approximately 10 minutes, stir and add tamarind pulp and jaggery.
  • Add turmeric powder and red chili powder.
  • Add freshly grated coconut and mix.
  • Simmer for another 5 minutes or until the Kantola is tender and excess water has evaporated.
  • Add salt to taste.
  • Mix well and switch off the heat.
  • Serve hot with rice and dal or roti.
