Indian Cauliflower Stir Fry

This Indian cauliflower stir fry is a quick and easy vegan side dish made with cauliflower, onion, tomato, turmeric, chili powder and garam masala. Ready in about 20 minutes, it is perfect for busy weeknight meals.

Ingredients

  • 2 cups cauliflower florets
  • 1 medium onion chopped
  • 1 small tomato chopped
  • 1 teaspoon turmeric powder
  • 1 teaspoon chili powder or paprika
  • 1 teaspoon garam masala optional
  • 1 tablespoon lemon juice optional
  • 2 tablespoons oil
  • salt to taste
  • chopped cilantro for garnish

Instructions

  • Heat oil in a large skillet over medium heat. Add chopped onion and sauté until softened and lightly golden.
  • Add chopped tomato and cook until slightly soft.
  • Add cauliflower florets and stir well. Cook for 7 to 10 minutes, stirring occasionally, until tender-crisp.
  • Add turmeric, chili powder and garam masala. Toss until the cauliflower is evenly coated.
  • Add salt and lemon juice.
  • Garnish with chopped cilantro and serve warm.

Notes

For crisp-tender cauliflower, do not overcook the florets.
Use paprika for a milder version.
Add extra chili powder if you prefer more heat.
Garam masala and lemon juice are optional.
Broccoli can be substituted for cauliflower.
For frozen cauliflower, thaw and pat dry before cooking.
