Mixed Vegetable Raita

Ingredients

  • 1 cup yogurt / curd
  • 1/2 cup Tomato finely chopped
  • 1/2 cup onion finely chopped
  • 1/4 cup capsicum finely chopped
  • 1 green chilli finely chopped (optional)
  • 2 tablespoon Coriander Leaves finely chopped
  • To taste Salt

Instructions

  • Take a mixing bowl and add yogurt. Whisk it.
  • Add other chopped vegetables and mix well.
  • Add salt to taste carefully, else mixed vegetable raita will become salty.
  • Garnish with finely chopped coriander leaves.

Notes

  • To make mixed vegetable raita spicy, add chopped green chilli only if needed.
  • Add little water to change the consistency of raita if it is too thick. I normally don’t add water to the raita I make at home as I prefer it thick.
  • Add spice powders like cumin or kala jeera if needed to improve the taste. I prefer my raita plain, so don’t add any spice powders.
