Savory Veggie Corn Cheese Muffins

You all know by now that I will be participating in the Indian Food Bloggers(IFBM) meet this Friday. Yup, I am very much excited regarding the same. Most of my close friends know by now the cause of my happiness these days. I have been cooking, blending and baking a lot of things. Thanks to the contests happening at IFBM. It made me think and innovate. I was able to make time despite the hectic schedule just to ensure that I participate in these contests.
There is another exciting contest happening at IFBM. It is the Freedom Tree Baking Contest where we have to bake a dish with fresh corn. Ahh, this was a real challenge for me as baking is a subject where I have to learn a lot. I thought I’ll wait for Eid holiday to make something exciting. I had seen a post of Savory muffins on the Internet and since then I wanted to try it.  I modified the original recipe and this was the best opportunity for me to try this Savory Veggie Corn Cheese Muffins recipe. So today evening I went out shopping with a list of ingredients that I would need.
When I saw that all the shops in my layout are closed on account of Eid, I thought I’ll give up. I bought American Corn on cob from the local vegetable vendors with some hope to find all purpose flour somewhere. I had almost given up when at 7.00 PM my neighbor, a friendly Sardarji aunt came home. I told her about the IFBM and the contests. She told me some recipes with corn. She does not know to bake but she gave me several ideas, like kababs and rolls.
I told her about the corn muffins and she liked the idea. Just then I told her that I don’t have maida at home. She said “Don’t worry, my son is gone to MORE megastore, he will get”. She called him immediately and asked him to get a packet of maida. Done, now was the task to bake something interesting. I extracted the corn kernels from the cob and  wiped up the ingredients. The Savory Veggie Corn Cheese Muffins are getting ready in the microwave.
My hubby is working late in office despite it being a public holiday. I just pinged him and told him, that I have baked something interesting, come soon. It is 12.00 AM and I am waiting for him to come home and taste these muffins.

This recipe goes as an entry to the “IFBM and Freedom Tree Baking Contest

Ingredients:                                                               Makes : 6-8 muffins
1 cup All purpose flour/maida
1/2 cup sweet corn kernels
1/2 cup chopped capsicum
1/4 cup chopped coriander
1/4 cup chopped onion
1/2 cup grated cheese
2 tablespoon chili flakes
3 tablespoon Italian seasonings
1/2 teaspoon salt

1 Egg
3/4 cup yogurt
1/4 cup olive oil

Procedure:
Take two bowls. I will say, bowl1 and bowl2.
In bowl1, beat eat the egg and mix yogurt. Add olive oil, mix and keep aside.
In bowl2, mix the flour and other ingredients and keep aside.
Add the ingredients from bowl1 to bowl2 mixing slowly.
Pre-heat the microwave in convection mode to 180 degree for 5 Min’s.
Grease the muffin tray.
Spoon the muffin tray with the mixture. Brush some olive oil on top of the muffin mixture. This gives it a golden colour. Bake for 20 Min’s or until golden brown.

    Tried these last night… did u fill the mould till the brim?? I filled them 3/4th (keeping cup cakes in mind 😀 😀 )
    Then realised i had made a mistake 🙂 They tasted very good…i gonna make them again for my blog and will definitely mention you in the post 🙂
